Why This Salted Caramel Apple Cake Will Become Your Fall Favorite
This isn’t just another apple cake; it’s a carefully crafted recipe designed for maximum flavor and an irresistible texture. Here’s why this particular cake stands out:
- Unbeatable Moisture: We all dread a dry cake. This recipe employs a triple-threat approach to ensure an incredibly moist crumb every single time, making it a dream to eat.
- Perfectly Spiced: A balanced blend of cinnamon and nutmeg provides that classic fall warmth without overpowering the natural sweetness of the apples and caramel.
- Generous Apple Chunks: Packed with three whole apples, diced into small, tender pieces, you get a delightful apple burst in every bite.
- Decadent Salted Caramel Buttercream: This isn’t just any frosting. Made with homemade salted caramel sauce, it adds a luxurious, sweet-and-salty counterpoint that perfectly complements the apple cake.
- Easy to Make: Despite its impressive appearance and gourmet flavor, this cake is straightforward to prepare, making it accessible for bakers of all skill levels.
Ingredients Spotlight: The Secrets to a Super Moist Apple Cake
The foundation of any great cake lies in its ingredients. For this Salted Caramel Apple Cake, I’ve used three whole apples, diced into small, manageable pieces. While I often use ‘Sunrise’ apples for their delightful flavor and texture, ‘Granny Smith’ apples would also be an excellent choice, offering a tart counterpoint that beautifully balances the sweetness of the caramel. ‘Gala’ apples are another fantastic option, providing a sweet and crisp element.
The secret to a truly unforgettable cake, in my opinion, lies in its moisture. I know, “moist” is a word many people shy away from, but seriously, it’s non-negotiable! A dry cake can be utterly disappointing. To guarantee this cake achieves peak moisture levels – yes, I’m going to keep saying it – I’ve incorporated a powerhouse trio of ingredients:
- Applesauce: Adds natural sweetness and moisture without extra fat. It helps keep the cake tender and flavorful.
- Greek Yogurt: This is a game-changer for moisture and tenderness. Its acidity reacts with the baking soda, creating a lighter crumb, while its fat content contributes to a rich, moist texture. Using it at room temperature ensures it blends smoothly into the batter.
- Butter: Classic for a reason, butter provides richness, flavor, and helps create a tender crumb. Melting it ensures even distribution throughout the batter.
This recipe is designed to create two thick, luscious layers, allowing for a generous, luxurious filling of buttercream in the middle. If you prefer, you could easily divide the batter into three thinner layers for a slightly taller cake with multiple frosting tiers.
Crafting the Irresistible Salted Caramel Buttercream
While your delightful apple cake bakes and fills your kitchen with the most incredible aromas, you’ll want to prepare the star of the show: the homemade salted caramel sauce. This rich, amber-hued sauce is surprisingly easy to make and forms the base of our dreamy buttercream. Try to resist eating it straight from the spoon – it’s truly a challenge! Ensure the caramel sauce is completely cooled before incorporating it into the buttercream; this is key to achieving the right consistency.
The Salted Caramel Buttercream is truly exceptional. Once your cake layers have completely cooled, it’s time to bring this magic to life. You’ll begin by beating softened unsalted butter until it’s light and fluffy. Then, the cooled salted caramel sauce is added, transforming the butter into a silky, caramel-infused base. Finally, powdered sugar and pure vanilla extract are gradually incorporated, resulting in a cloud-like frosting that is both sweet, salty, and utterly addictive. There isn’t a better icing out there to complement the spiced apple cake!

This recipe yields enough icing to generously cover the entire cake, including a thick, luscious layer in the middle. I personally love to create a visually appealing, slightly rustic look with ample frosting on top and between the layers, allowing the caramel to truly shine. However, whether you opt for a simpler spread or a more elaborate application, the taste will be equally divine. The combination of apple and caramel is undeniably a match made in heaven, especially during the fall season!
The Perfect Fall Dessert for Any Occasion
To me, this cake simply screams fall. It embodies everything wonderful about autumn, from its comforting spices to its wholesome apple goodness, all elevated by that touch of luxurious caramel. This isn’t just a cake; it’s a statement piece, a conversation starter, and a truly memorable treat.
I highly recommend considering this Salted Caramel Apple Cake as your show-stopping dessert for your next gathering. Imagine serving this at your Thanksgiving feast, a cozy family dinner, or a potluck with friends. It’s guaranteed to impress and delight everyone who takes a bite. Or, perhaps, make it just for you and your family – then watch how quickly it disappears! It’s so good, it rarely lasts long, a testament to its irresistible charm.

Salted Caramel Apple Cake

Total Time: 1 hours 10 minutes
Yield: 1 2-layer cake
Description
Treat yourself to this lightly spiced salted caramel apple cake with salted caramel frosting! This easy caramel apple cake contains chunks of juicy apple and loads of caramel!
Ingredients
- 3 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- 1 cup unsweetened applesauce
- 1 cup plain Greek yogurt (I used 2%), room temperature
- 1 1/2 cups brown sugar
- 2 eggs, lightly beaten, room temperature
- 3/4 cup unsalted butter, melted and cooled
- 3 large apples, diced into small pieces (sunrise, granny smith, gala)
Salted Caramel Buttercream
- 1 cup unsalted butter, room temperature
- 1 cup salted caramel sauce (cooled)
- 3 cups powdered sugar (icing sugar)
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 350 F (175 C) and generously grease and flour two 9″ round cake pans. Ensure the pans are thoroughly coated to prevent sticking. Set aside.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Make sure they are well combined. In a separate, medium-sized bowl, whisk together the applesauce, Greek yogurt, and brown sugar until the mixture is smooth and lump-free. Add the lightly beaten eggs to the wet mixture and combine thoroughly. Finally, slowly pour in the melted (and cooled) butter while continuously whisking to ensure it’s fully incorporated.
- Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or wooden spoon just until all the dry ingredients are moistened and incorporated. Be careful not to overmix, as this can lead to a tough cake. Gently fold in the diced apples, distributing them evenly throughout the batter. Divide the batter evenly between the two prepared cake pans. Place the pans in the preheated oven and bake for 30-35 minutes, or until a wooden toothpick inserted into the center of the cakes comes out clean. (Mine typically takes around 32 minutes.) Remove the cake pans from the oven and allow the cakes to cool in the pans for about 10 minutes before gently inverting them onto a wire rack. Let them cool completely on the wire rack before frosting.
- While the cake is baking or cooling, it’s the perfect time to prepare your salted caramel sauce (find the recipe by clicking the link). Once your cake layers have cooled completely, you’re ready to make and apply the frosting. In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld electric mixer), beat the room temperature unsalted butter for about 2 minutes until it’s light, fluffy, and pale in color. Add the cooled salted caramel sauce and beat for another 30 seconds to a minute until well combined. Incorporate the pure vanilla extract. Then, add 1 cup of the powdered sugar (icing sugar) and mix slowly until it begins to combine, gradually increasing the speed as the sugar is incorporated. Repeat this process with the remaining 2 cups of powdered sugar, adding more or less sugar as needed to achieve your desired frosting consistency – smooth, spreadable, and perfectly pipeable. Finally, frost your beautifully cooled cake layers, assembling them with a generous layer of buttercream in the middle, and covering the top and sides.
This exquisite cake will keep wonderfully at room temperature, stored in an airtight container, for 4-5 days. For longer storage, the unfrosted cake layers can be wrapped tightly in plastic wrap and then aluminum foil, and frozen for up to 2 months. Thaw at room temperature before frosting.
