The Green Goddess Turkey Sandwich

Transform your midday meal into a gourmet experience with this incredible Turkey Pesto Sandwich! It’s a simple yet sophisticated creation featuring tender carved turkey, creamy provolone cheese, vibrant pesto, and sweet sundried tomatoes, all nestled between slices of your favorite toasted bread. Say goodbye to dull lunches and hello to a burst of flavor that will leave you fully satisfied. And for those seeking a delicious alternative, this recipe easily adapts into a fantastic chicken pesto sandwich too!

Do your daily lunches often feel a bit monotonous? My husband and I, both working from the comfort of our home, enjoy the luxury of not having to pack lunches. However, this often leads us to rely heavily on leftovers, which, let’s be honest, can sometimes lack that exciting spark we crave. While practical, reheated dinner from the night before doesn’t always hit the spot when you’re looking for something truly special to break up the workday.

But what if there was a simple solution to elevate your lunch routine from “just sustenance” to “something to look forward to”? Imagine biting into a warm, toasty, and incredibly flavorful sandwich – a culinary delight that feels indulgent without demanding hours in the kitchen. For a long time, our sandwich options were limited to veggie versions or standard deli meat fare, primarily because we rarely had pre-cooked meat readily available. That all changed the day we discovered store-bought oven-roasted carved turkey breast. This game-changing ingredient instantly transformed our perception of what a homemade sandwich could be, leading to the creation of this very Turkey Pesto Sandwich – a true upgrade to our lunch game!

Why This Turkey Pesto Sandwich is a Must-Try

This isn’t just any sandwich; it’s a culinary experience designed to bring joy and incredible flavor to your palate. Here’s why the Turkey Pesto Sandwich should become a staple in your meal rotation:

  • Uncomplicated Yet Gourmet: Despite its rich, gourmet taste, this sandwich is remarkably simple to prepare, making it perfect for busy weekdays or relaxed weekends.
  • Bursting with Flavor: The combination of savory turkey, aromatic pesto, tangy sundried tomatoes, and melty provolone creates a symphony of flavors in every bite.
  • Warm and Comforting: Grilling the sandwich elevates it to another level, providing a delightful crispy exterior and a warm, gooey interior that’s incredibly satisfying.
  • Highly Customizable: From different types of bread and cheese to various pesto flavors and protein choices, this recipe offers endless possibilities for personalization.
  • Versatile for Any Occasion: While it makes an excellent lunch, it’s also a fantastic option for a light dinner, a picnic, or even a quick snack.

Essential Ingredients for the Ultimate Turkey Pesto Sandwich

Crafting this delightful sandwich requires just a handful of high-quality ingredients. Each component plays a crucial role in building the layers of flavor that make this recipe so special. Here’s what you’ll need:

  • Carved turkey breast
  • Provolone cheese
  • Bacon (optional, but highly recommended!)
  • Pesto sauce
  • Sundried tomatoes
  • Your favorite thick-sliced bread
  • Unsalted butter

Choosing Your Turkey (or Chicken) Protein

The star of our sandwich is the turkey, and the quality of your choice can significantly impact the final taste and texture. You have a few excellent options here:

  • Leftover Holiday Turkey: If you happen to have any roasted turkey breast from a holiday feast, this is the perfect opportunity to give it a delicious second life. Ensure it’s thinly sliced for the best results, as thicker chunks can make the sandwich harder to grill and eat. While dark meat has its place, white turkey breast tends to work exceptionally well in this particular sandwich, offering a leaner profile that complements the rich pesto.
  • High-Quality Deli Turkey Breast: For everyday convenience, a good quality, pre-packaged oven-roasted carved turkey breast is an excellent choice. Look for brands that offer thinly sliced, flavorful options, such as the carved turkey breast from Lilydale (as mentioned in the original inspiration). These often have a texture and taste far superior to standard thinly sliced deli meats.
  • Chicken Variation: Don’t have turkey? No problem! This recipe is incredibly adaptable. Simply swap the turkey for thinly sliced roasted chicken breast or a quality chicken deli meat to create an equally scrumptious chicken pesto sandwich. The preparation steps remain exactly the same.

The Foundation: Your Perfect Bread

The bread isn’t just a vehicle; it’s a crucial part of the sandwich’s character. We absolutely adore using thick-sliced sourdough bread for this recipe. Its robust structure stands up beautifully to the fillings and buttering for grilling, while its characteristic tangy flavor adds another layer of complexity to the overall taste. However, feel free to experiment with other varieties:

  • Ciabatta: Offers a chewy texture and airy pockets that absorb flavors wonderfully.
  • Whole Wheat: A healthier option that provides a nutty flavor and good fiber.
  • Brioche: For an indulgent, slightly sweet, and buttery experience.
  • Multigrain: Adds texture and a hearty feel.

The key is to choose a bread that’s sturdy enough to hold all the delicious fillings without getting soggy once toasted.

Bacon: A Crispy Addition (Optional)

While optional, adding bacon introduces a fantastic crispy texture and a smoky, salty kick that perfectly complements the other flavors. I’ve successfully used both regular pork bacon and leaner turkey bacon in this sandwich. Both are excellent, so choose whichever you prefer or have on hand. If you’re vegetarian or simply wish to omit the bacon, the sandwich will still be incredibly flavorful and satisfying without it.

Cheese: For Creamy Goodness

Provolone cheese is a classic choice for its mild, slightly tangy flavor and excellent melting properties. When grilled, it becomes beautifully soft and gooey, binding all the ingredients together. However, don’t hesitate to customize this element based on your preference:

  • Mozzarella: For an even milder taste and super-stretchy melt.
  • Swiss: Adds a nutty, slightly sweet note.
  • White Cheddar: For a sharper, more robust flavor.
  • Smoked Gouda: If you want to introduce a distinct smoky depth.

Any good melting cheese will work wonders here, so feel free to get creative!

Pesto: The Flavor Powerhouse

Pesto is the secret weapon in this sandwich, infusing it with vibrant herbaciousness and a rich, garlicky aroma. You have two main routes for your pesto:

  • Store-Bought Pesto: This is a fantastic time-saver. Many high-quality options are available in most grocery stores. Look for one with fresh ingredients and a good balance of basil, garlic, pine nuts (or other nuts), Parmesan cheese, and olive oil.
  • Homemade Pesto: If you have a few extra minutes, making your own pesto truly takes this sandwich to the next level. The freshness is unmatched. My personal favorite is a walnut basil pesto recipe, which offers a slightly different nutty depth compared to traditional pine nut pesto.

Regardless of whether you choose store-bought or homemade, ensure your pesto is fresh and flavorful.

Sundried Tomatoes: For Tangy Sweetness

These little gems add a burst of concentrated tomato flavor and a wonderful chewy texture. Oil-packed sundried tomatoes are generally more tender and flavorful. Make sure to drain them well and dice them if they are too large, ensuring even distribution throughout the sandwich.

Butter: For Golden Crispiness

Unsalted butter is essential for achieving that perfectly golden-brown and crispy exterior when grilling the sandwich. Using unsalted butter allows you to control the overall saltiness of the dish, especially when other components like bacon and cheese contribute their own salt.

Preparing the ingredients for a delicious turkey pesto sandwich

Step-by-Step Instructions for Your Turkey Pesto Sandwich

Follow these simple steps to create your perfect toasted Turkey Pesto Sandwich:

  1. Prepare the Bacon (If Using): If you’re including bacon in your sandwich, begin by cooking it in a skillet or on a griddle over medium heat until it reaches your desired level of crispness. Once cooked, remove the bacon from the pan and place it on a plate lined with paper towels to blot off any excess grease. This ensures your sandwich remains delightfully crispy, not greasy.
  2. Assemble the Sandwich: Lay out your two thick slices of bread on a clean cutting board. Generously spread pesto evenly over the inner side of both slices. On one slice of bread, layer the ingredients in this order: first, a good portion of thinly sliced turkey breast, followed by the crispy bacon (if using), then the provolone cheese, and finally, the diced sundried tomatoes. Place the second slice of bread, pesto-side down, on top to complete the sandwich.
  3. Butter and Grill: Evenly spread about half of the room-temperature unsalted butter over the top side of your assembled sandwich. Heat a large griddle or skillet over medium-high heat. Once hot, carefully place the sandwich, buttered-side down, onto the preheated surface. While the bottom side is toasting, spread the remaining butter over the top side of the sandwich. Fry the sandwich for approximately 4-5 minutes per side, or until both sides are beautifully golden brown and crispy, and the cheese inside has melted into a gooey perfection.
  4. Pro Tip for Melty Cheese: To ensure your provolone cheese gets extra melty and wonderfully gooey, cover the skillet with a lid while the sandwich is cooking. This traps the heat, helping the cheese melt faster and more uniformly, enhancing the overall deliciousness of your sandwich!

Serve your magnificent sandwich immediately! It truly is at its absolute best when it’s piping hot, with the bread crisped to perfection and the cheese gloriously melted. The warmth brings out all the incredible flavors of the pesto, turkey, and sundried tomatoes. While it’s fantastic on its own, I’ve got some wonderful ideas for salads and soups below that would make perfect companions for this gourmet delight.

Expert Tips for a Flawless Turkey Pesto Sandwich

  • Room Temperature Butter: Ensure your butter is at room temperature. This makes it much easier to spread evenly onto the bread without tearing it, leading to a consistent golden crust.
  • Don’t Overcrowd the Pan: If making multiple sandwiches, avoid overcrowding your skillet. Give each sandwich enough space to cook evenly and get that perfect crispy texture.
  • Even Pesto Distribution: Spread the pesto all the way to the edges of the bread. This ensures every bite is infused with that wonderful herb flavor.
  • Medium Heat is Key: While we aim for a golden crust, don’t crank the heat too high. Medium-high heat allows the bread to crisp slowly while the internal components, especially the cheese, have time to warm through and melt without burning the exterior.
  • Press Gently: For maximum contact with the skillet and an even toast, you can gently press down on the sandwich with a spatula as it cooks. This also helps meld the fillings together.

Can You Use Leftover Turkey for This Sandwich? Absolutely!

This sandwich is hands down one of the BEST ways to repurpose any leftover turkey breast you might have from holiday gatherings or a Sunday roast. It transforms what might otherwise be a mundane leftover meal into something exciting and fresh. The key to success when using leftover turkey is how you prepare it:

  • Thinly Slice: Make sure to slice the cooked turkey meat very thinly. This isn’t just for ease of eating; it also ensures that the turkey heats through evenly as the sandwich grills, integrating beautifully with the other ingredients. Large, thick chunks of meat tend to fall out during flipping and can create an uneven texture.
  • White Meat Preference: While I’m usually a fan of the richer flavor of dark turkey meat, for this specific sandwich, the milder white turkey breast meat tends to be a better fit. Its subtle flavor allows the pesto and sundried tomatoes to shine, creating a harmonious balance.
  • Quality Deli Meat Alternative: If you don’t have fresh leftover turkey, a good quality, pre-packaged carved deli turkey breast is an excellent substitute. These are often seasoned and thinly sliced, making them perfect for a quick and easy sandwich.

Serving Suggestions and Delightful Variations

While this Turkey Pesto Sandwich is undeniably superb on its own, pairing it with a complementary side can elevate your meal. Here are some ideas for creating a complete and satisfying spread:

Perfect Pairings

  • Fresh Salads: A crisp, light salad provides a wonderful contrast to the rich flavors of the sandwich. I highly recommend trying it with my roasted corn and chickpea kale salad for a vibrant and nutritious side. Other great options include a simple kale salad, a classic Caesar, or a fresh green salad with a vinaigrette.
  • Hearty Soups: For a comforting and filling meal, serve your sandwich alongside a warm bowl of soup. This sandwich pairs beautifully with creamy soups like my Instant Pot loaded cauliflower soup, or lighter options such as tomato basil or a vegetable broth-based soup.
  • Pasta Salads: A refreshing pasta salad, like my Mexican street corn pasta salad, adds another layer of texture and flavor, making for an exciting and complete meal.
  • Fresh Fruit or Veggie Sticks: For a lighter side, a simple bowl of fresh fruit or a plate of crunchy veggie sticks with hummus can be an excellent choice.

Sandwich Variations to Explore

  • Chicken Pesto Sandwich: As mentioned, substituting thinly sliced roasted chicken breast or quality chicken deli meat for turkey creates an equally delicious chicken pesto sandwich. All other ingredients and instructions remain the same.
  • Vegetarian Pesto Sandwich: For a meat-free option, simply omit the turkey and bacon. You can add grilled vegetables like zucchini, bell peppers, or eggplant, or even some fresh mozzarella and extra sundried tomatoes to create a hearty vegetarian pesto sandwich.
  • Spicy Kick: Add a pinch of red pepper flakes to your pesto, or a thin layer of sriracha mayo, for those who enjoy a little heat.
  • Different Cheeses: Experiment with different cheeses like mozzarella, Swiss, or smoked gouda to change the flavor profile.
  • Add Roasted Red Peppers: Roasted red peppers provide a sweet, smoky element that complements the pesto and turkey beautifully.

Description

Make life delicious with this turkey pesto sandwich! It’s a simple carved turkey sandwich with provolone, pesto and sundried tomatoes. Lunch just got a whole lot better.

Ingredients

Scale

  • 2 thick slices sourdough bread
  • 3–4 tbsp pesto sauce (store-bought or homemade)
  • 100g oven roasted turkey breast, sliced thinly*
  • 2–4 slices of bacon, cooked according to package directions
  • 2 slices provolone cheese
  • 4 large sundried tomatoes, diced
  • 2 tbsp (60 mL) unsalted butter, room temperature divided

Instructions

  1. Heat a large griddle or skillet over medium-high heat. Place two slices of sourdough, side by side on a cutting board. On both slices of sourdough, spread the pesto evenly.
  2. On one slice, top with the cooked turkey breast, followed by the bacon, provolone cheese, and sundried tomatoes. Place the second slice of sourdough on top.
  3. Smear the top of the sandwich with 1 tablespoon of butter, and then place that side of the sandwich down on the large griddle or skillet. Smear the remaining tablespoon of butter over the top. Toast the sandwich in the pan until golden brown and the cheese begins to melt, about 4-5 minutes per side. Place a lid on top of the pan while cooking to speed up the cheese melting.
