During the festivities, I even had the exciting chance to meet Alexander Ludwig, an actor many of you might recognize from “The Hunger Games” or, like me, as a main character in my absolute favorite show, “Vikings”! It turns out he’s the cousin of our dear friends who were getting married, adding an extra layer of sparkle to an already memorable event. After such a wonderful, food-filled weekend, brimming with delicious indulgences and celebratory libations, Etienne and I found ourselves craving something light, fresh, and deeply satisfying straight from the grill.   • zest of 1/2 lime
  • 2 tbsp fresh ginger, finely grated
  • 2 cloves garlic, minced

Peaches Marinade

  • 1 tbsp fresh ginger, finely grated
  • 2 tsp granulated sugar
  • juice of 1 fresh lime (approx. 2 tbsp)
  • Frontier Co-op table grind sea salt, for sprinkling after grilling

  1. **Marinate the Chicken:** The night before grilling, or at least 4 hours prior, whisk together all the ingredients for the chicken marinade (soy sauce, oil, lime juice, lime zest, grated ginger, and minced garlic) in a large bowl. Place the flattened chicken breasts into a large Ziploc bag or a shallow dish and pour the marinade over them, ensuring the chicken is thoroughly coated. Seal the bag or cover the dish and refrigerate, allowing the flavors to meld and tenderize the chicken.
  2. **Prepare the Peaches for Grilling:** Approximately 30 minutes to an hour before you plan to grill, prepare the peaches.
