  • 3 cups mini twist pretzels
  • 1/2 cup roasted, salted cashews
  • 1/2 cup roasted, salted peanuts
  • 1 sprig fresh rosemary**
  • 2 garlic cloves, mashed***
  • 3 tbsp olive oil
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Prepare your popcorn: Microwave the Quinn popcorn according to package directions, adding the designated seasoning bags, OR air-pop 6 cups of popcorn (this usually requires about 1/4 cup of kernels). Transfer the popped popcorn into a large mixing bowl. Add the pretzels, cashews, and peanuts, then gently toss them together to ensure an even distribution.
  2. Prepare the infused oil: In a small saucepan, combine the olive oil, fresh rosemary sprig, and mashed garlic cloves. Place the saucepan over medium heat. Heat the oil until it’s fragrant and the garlic and rosemary begin to gently sizzle. Continue to “cook” for 3-4 minutes, allowing the flavors to infuse deeply into the oil, then remove the pan from the heat. Carefully remove and discard the garlic cloves (or enjoy them if you wish!). Remove the rosemary sprig, pick off the leaves, and finely mince them.
  3. Combine and serve: Drizzle the warm, infused olive oil evenly over the popcorn and snack mix in the large bowl. Add the minced fresh rosemary leaves. Toss everything thoroughly to ensure every kernel and piece of snack mix is coated. Finally, sprinkle in the freshly grated Parmesan cheese and toss one last time. Serve immediately for the best fresh flavor and crunch!

This Parmesan Rosemary Popcorn is at its peak flavor and texture when served fresh. However, if you have any leftovers, they remain delightfully tasty for 1-2 days when stored in an airtight container at room temperature.

*For this recipe, I used the Quinn brand of parmesan rosemary microwave popcorn, which already includes some flavorings.

**If you are not using the parmesan rosemary flavored microwave popcorn, I highly recommend increasing this to 2 sprigs of fresh rosemary for a more pronounced flavor.

***To easily mash garlic, I typically use the flat side of a wide knife blade, pressing down firmly.
