Meet the tastiest nutella muffins you’ll ever have! These cinnamon nutella muffins are on the healthier side but are full of flavor!


Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/3 cup unsalted butter, melted and slightly cooled
  • 3 tbsp unsweetened applesauce
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup + 2 tbsp unsweetened almond milk
  • 1/2 cup Nutella
  • sparkling sugar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-count muffin pan with paper liners, or thoroughly spray the cavities with nonstick cooking spray.
  2. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Ensure all dry ingredients are well combined. In a separate medium bowl, whisk together the melted and slightly cooled unsalted butter and unsweetened applesauce. Next, add the large eggs and pure maple syrup to the wet mixture, whisking vigorously until thoroughly combined. Slowly pour in the unsweetened almond milk, continuing to whisk until the mixture is smooth. Add the dry ingredients to the wet ingredients, mixing gently with a large spoon or spatula just until there are no visible streaks of flour remaining. Be careful not to overmix the batter.
  3. Using a cookie dough scoop or a large spoon, add approximately 1 ½ tablespoons of muffin batter to the bottom of each prepared muffin cavity. On top of this base layer of batter, drop about 2 teaspoons of Nutella. Take a toothpick and gently swirl the Nutella around through the muffin batter, creating delightful ribbons of chocolate-hazelnut. Divide the remaining muffin batter evenly amongst the muffin cups, filling them about two-thirds full. Follow this with the remaining Nutella, dropping about 1 teaspoon on top of the batter in each muffin cup. Swirl the top Nutella layer again with a clean toothpick for a beautiful finish. Optionally, sprinkle the tops of the muffins with sparkling sugar for added texture and sparkle. Place the muffin pan in the preheated oven and bake for 20-22 minutes. Begin checking the muffins at 20 minutes by inserting a toothpick into the center (avoiding large Nutella pockets). If the toothpick comes out clean or with a few moist crumbs, they are done. If there is still wet batter, bake for an additional 2 minutes before checking again. Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before carefully transferring them to a wire rack to cool completely.

These delicious muffins can be stored at room temperature in an airtight container for up to 3 days, or for 4-5 days in the refrigerator. For longer storage, muffins also freeze exceptionally well for up to 2 months. To enjoy from frozen, simply thaw at room temperature or warm briefly in the microwave.
