Unveiling Harissa: The Spice That Transforms
You might be wondering, “What exactly is harissa?” While it hasn’t made a frequent appearance on my blog before (my kids are only just beginning to tolerate a little heat!), I’m intimately familiar with this incredible spice blend. And I’m thrilled to report that these roasted harissa potatoes were devoured without a single complaint, which is high praise in our household!
Harissa is a vibrant and aromatic chili paste or powder that hails from North Africa and the Middle East. It’s a staple in many cuisines from these regions, celebrated for its complex flavor profile. Typically, harissa paste is made from a blend of hot chili peppers (such as Baklouti or serrano peppers), garlic, olive oil, and various spices like caraway, coriander, and mint. When found in powder form, as I often use, it delivers a potent combination of peppery warmth, smoky undertones, and a distinct garlic flavor. It’s more than just spicy; it’s deeply savory and incredibly fragrant, capable of adding an exotic flair to any dish. Understanding harissa is key to appreciating how it elevates simple potatoes into something truly special.
Why These Harissa Potatoes Will Become Your New Go-To Side
Beyond their irresistible flavor, there are so many reasons why these roasted harissa fingerling potatoes deserve a spot in your weekly rotation. First and foremost, they are incredibly easy to make, requiring minimal effort for maximum impact. The preparation is straightforward, and the roasting process is largely hands-off, making them perfect for busy weeknights or when you need a reliable side dish that won’t stress you out.
Secondly, the flavor profile is simply out of this world. The harissa powder infuses the potatoes with a warm, smoky, and slightly sweet heat, balanced beautifully by the olive oil and a hint of honey. This unique combination creates a dish that is both comforting and exciting. Furthermore, fingerling potatoes, with their thin skin and creamy interior, are ideal for roasting as they crisp up wonderfully and absorb the flavors beautifully. Their elongated shape also makes for an elegant presentation.
Finally, these potatoes are incredibly versatile. They pair well with a vast array of main courses, from roasted chicken and grilled fish to vegetarian mains. They can even stand alone as a flavorful appetizer with a cooling dip. Quick to make, bursting with flavor, and adaptable to any meal, these harissa potatoes are a culinary win-win.
Crafting Your Perfect Batch of Roasted Harissa Potatoes
Creating these delightful roasted harissa potatoes is a breeze, requiring just a few simple ingredients and a straightforward method. The key to their incredible flavor and texture lies in the preparation and the perfect blend of seasonings. Let’s gather what we need and walk through the steps to achieve potato perfection.
Ingredients You’ll Need:
- 1.5 lbs fingerling potatoes, or any small potato variety
- 2 tablespoons olive oil
- 1 tablespoon harissa powder (see notes below for using paste)
- 1 tablespoon sesame seeds
- 1/2 teaspoon sea salt, plus extra for serving
- 2 tablespoons honey
- 1/4 teaspoon freshly cracked black pepper
Tools You’ll Need:
- Large roasting pan or baking sheet
- Large mixing bowl
- Whisk
- Spatula
- Sharp knife and cutting board

Step-by-Step Roasting Guide:
1. Preheat Your Oven and Roasting Pan: Begin by preheating your oven to a robust 425°F (220°C). Crucially, place your empty roasting pan or baking sheet into the oven as it preheats. Starting with a nice hot pan is a simple yet effective trick to ensure your potatoes achieve that coveted crispy exterior, preventing them from steaming and becoming soggy.
2. Prepare the Fingerling Potatoes: While the oven and pan are heating, wash and dry your fingerling potatoes thoroughly. Slice them lengthwise into halves. You can certainly leave them whole if you prefer, but slicing them not only expedites the roasting process significantly but also creates more surface area. This extra surface area allows for a wonderfully crispy underside when the potatoes lie flat on the hot pan, maximizing that desirable crunchy texture we all love.
3. Season and Toss: In a large mixing bowl, combine the olive oil, harissa powder, sea salt, and sesame seeds. Whisk these ingredients together until they are well combined and form a fragrant, spicy mixture. Add the sliced fingerling potatoes to the bowl and toss everything thoroughly. Ensure each potato half is evenly coated with the harissa mixture; this guarantees maximum flavor in every bite. Carefully remove the now piping hot pan from the oven. Arrange the seasoned potatoes in a single layer on the hot pan. Avoid overcrowding the pan, as this can lead to steaming rather than roasting. Return the pan to the oven and roast for an initial 20 minutes.

4. Add Honey and Finish Roasting: After 20 minutes, carefully remove the pan from the oven. Drizzle the honey evenly over the roasted potatoes. Using a spatula, gently toss the potatoes to ensure they are all coated with the sweet and sticky honey. This step adds a beautiful caramelization and a touch of sweetness that perfectly complements the spicy harissa. Return the pan to the oven and continue to roast for an additional 10 minutes, or until the potatoes are beautifully golden brown, caramelized, and can be easily pierced with a fork, indicating they are tender throughout.
5. Serve Immediately: Once perfectly roasted, remove the potatoes from the oven. Serve them immediately while they are hot and crispy. For an extra burst of flavor and a touch of elegance, sprinkle with an additional pinch of sea salt and a generous grind of fresh black pepper just before serving. Enjoy this delightful side dish!
Perfect Pairings: What to Serve with Roasted Harissa Potatoes
The beauty of these roasted harissa potatoes lies not only in their incredible flavor but also in their remarkable versatility. They make a fantastic side dish for almost any meal, adding a touch of exotic spice without overwhelming the main course. While they are certainly delicious enough to be served on their own as a flavorful appetizer (perhaps with a cooling yogurt or tahini dip to balance the heat), they truly shine when paired with complementary dishes.
Consider serving them alongside:
- Maple Dijon Salmon: The sweet and savory notes of maple Dijon salmon create a harmonious balance with the spicy, smoky potatoes.
- Crispy Baked Chicken Wings: For a more casual yet equally satisfying meal, these potatoes are a superb companion to crunchy, flavorful chicken wings.
- Pan-Seared Tilapia with Lemon Butter Sauce: The light, zesty flavor of lemon tilapia provides a refreshing contrast to the hearty harissa potatoes, making for a well-rounded and delightful dinner.
- Grilled Lamb Chops: The robust flavors of lamb are a natural match for the bold spices of harissa, creating a truly Mediterranean-inspired feast.
- Vegetarian Skewers: Alongside grilled halloumi and vegetable skewers, these potatoes elevate a simple vegetarian meal into a vibrant and filling dish.
- Hearty Lentil Soup: For a comforting and nutritious dinner, serve a bowl of hearty lentil soup with a side of these spicy roasted potatoes for added texture and flavor.

Frequently Asked Questions About Harissa Potatoes
Can I use harissa paste instead of powder?
Absolutely! Harissa paste is a fantastic alternative and often provides an even richer, more complex flavor profile due to its fresh ingredients. If you’re opting for paste, I recommend first stirring it together with the olive oil until fully combined to create a smooth, homogenous mixture. This ensures that the paste is evenly distributed and coats every potato piece beautifully. As a general guideline for substitution, use approximately 1.5 tablespoons of harissa paste for every 1 tablespoon of harissa powder called for in the recipe. Adjust to your taste preferences, as the heat level can vary between brands of paste.
Do I have to use fingerling potatoes?
While I adore the elegant look and creamy texture of roasted fingerling potatoes, you are certainly not limited to them! This recipe is wonderfully adaptable. Any small potato variety, such as baby red potatoes or new potatoes, will work beautifully. If you’re using larger potatoes like Russets, Yukon Golds, or even regular red potatoes, simply dice them into 1-inch to 1.5-inch wedges or cubes. Keep in mind that larger pieces may require a slightly longer cooking time to become tender. Always perform the fork check – if a fork easily glides through the center, your potatoes are ready!

Can you make these potatoes in the air fryer?
Yes, the air fryer is an excellent tool for making these harissa potatoes, especially during the warmer months when you want to avoid heating up your entire kitchen with the oven. To air fry, follow steps 1 and 2 for preparing and seasoning the potatoes. Then, preheat your air fryer to 400°F (200°C). Arrange the seasoned potatoes in a single layer in the air fryer basket, ensuring not to overcrowd it (you may need to cook in batches). Cook for 10 minutes. After 10 minutes, remove the basket, shake it vigorously to redistribute the potatoes, and then drizzle the honey over them. Toss to coat and return to the air fryer. Cook for an additional 5-7 minutes, or until the potatoes are golden, crispy, and fork-tender. This method often results in even crispier potatoes in less time!
How do I store and reheat leftovers?
Leftover harissa potatoes are a treat! Store any uneaten potatoes in an airtight container in the refrigerator for up to 3-4 days. To reheat, you have a few options: for best results and to regain some crispiness, spread them on a baking sheet and reheat in an oven or toaster oven at 375°F (190°C) for about 10-15 minutes, or until heated through and crisp. You can also reheat them in an air fryer for 5-7 minutes. Microwaving is an option for quick reheating, but the potatoes will be softer and lose their crispy texture.
Can I adjust the spice level?
Absolutely! The amount of harissa powder specified in the recipe provides a moderate, flavorful heat. If you prefer a milder spice, start with 1/2 to 3/4 tablespoon of harissa powder. For those who love an intense kick, feel free to increase the amount to 1.5 tablespoons or even 2 tablespoons. Taste and adjust the seasoning to your liking before tossing with the potatoes for roasting.
