It’s an overnight sensation, meaning most of the work is done the night before, leaving you free to enjoy your morning and savor every delicious bite. Whether it’s a special holiday brunch, a family gathering, or simply a treat for your loved ones, this make-ahead casserole promises “ooohs and aaahs” with minimal effort.

The Magic of Make-Ahead Breakfasts: Stress-Free Entertaining
For anyone who loves hosting or simply wants to enjoy a relaxed morning, the concept of an overnight breakfast casserole is pure genius. Instead of scrambling in the kitchen when guests arrive or trying to juggle multiple pans, you can assemble this Nutella Pear French Toast Bake the evening before. This allows the bread to thoroughly soak up the rich egg and milk custard, resulting in an incredibly moist and flavorful texture. By morning, all that’s left is to pop it into the oven, liberating you to spend quality time with family and friends, sip your coffee, and truly unwind.
This convenience is invaluable, especially during festive seasons or extended weekends when you’re likely to have a house full of hungry mouths. The ability to prepare ahead removes the stress from morning meal prep, allowing you to present a spectacular, warm, and inviting dish that tastes like you spent hours on it.
Crafting Your Perfect French Toast Casserole: Key Ingredients
The success of any great recipe lies in its ingredients. For this Nutella Pear French Toast Casserole, a few key components come together to create a symphony of flavors and textures.
Choosing the Right Bread for Overnight French Toast
The foundation of any exceptional French toast is the bread, and for an overnight casserole, selecting the right type is crucial. You’ll want to use a crusty, somewhat stale bread. While it might sound counterintuitive, stale bread is the secret to a perfectly structured casserole. Its drier texture allows it to absorb the egg and milk mixture more effectively without becoming soggy. This deep absorption is what gives overnight French toast its signature rich, custardy interior and slightly crisp exterior.
My top recommendations include hearty sourdough or fluffy challah bread. Both offer a robust structure and delightful flavor profile that complements the sweet pears and Nutella beautifully. If your bread isn’t quite stale, simply leave it out of its bag on the counter for a few hours or even overnight before preparing the casserole. This simple step ensures maximum absorption and a truly divine end result.

The Irresistible Charm of Nutella (or a Homemade Alternative)
Ah, Nutella! The creamy, chocolate-hazelnut spread that has captivated taste buds worldwide. Its rich, indulgent flavor is a perfect pairing for the sweet, tender pears in this casserole, adding a layer of decadence that is simply irresistible. Whether you’re a lifelong fan or new to its magic, Nutella brings a luxurious depth to this breakfast bake that elevates it from good to absolutely divine.
For those who prefer to know every ingredient or have dietary considerations, I’ve even linked to my homemade “Notella” recipe, a 3-ingredient alternative that offers a similar luscious experience without the mystery ingredients. However, if you’re like me and appreciate the convenience and classic taste of the store-bought variety, don’t hesitate to use it. Either way, the chocolate-hazelnut swirls woven throughout the French toast are a treat you won’t want to miss.
Selecting and Preparing Pears
Pears are the unsung heroes of this casserole, bringing a natural sweetness and delicate texture. For optimal flavor and consistency, choose two large, ripe pears. They should be firm but yield slightly to gentle pressure, indicating they are sweet and juicy. Avoid overly soft pears, as they might become too mushy during baking. Pears that are too hard, conversely, won’t offer the desired tenderness.
Once selected, cube your pears into approximately 1-inch pieces. You can peel them if you prefer a smoother texture, but leaving the peel on adds a rustic charm and a bit of extra fiber and color to the dish. These fruit pieces will soften beautifully as they bake, releasing their fragrant juices into the bread, creating pockets of fruity delight.
The Custard Base: Eggs, Milk, and Sweet Spices
Beyond the bread and key fillings, the custard mixture is what transforms ordinary bread into French toast. A simple blend of large eggs, milk (any kind you prefer – 1%, 2%, or non-dairy works well), brown sugar for sweetness and depth, fragrant vanilla extract, and a touch of warm cinnamon creates the perfect liquid base. This custard not only moistens the bread but also infuses every bite with a comforting, sweet, and subtly spiced flavor profile that makes this breakfast truly special.

Step-by-Step Guide to Your Overnight Nutella Pear French Toast Casserole
Preparing this decadent breakfast bake is surprisingly simple, especially since the bulk of the work happens the night before. Here’s how to assemble your culinary masterpiece:
Night Before Preparation
- **Prep Your Pan and Bread:** Begin by greasing an 8×8 inch baking pan or spraying it generously with non-stick spray. This ensures your French toast casserole slides out easily. Cut your chosen loaf of French bread or sourdough into 1-inch cubes. Spread half of these cubes evenly across the bottom of the prepared pan.
- **Create the Nutella Cream Cheese Layer:** In a stand mixer bowl (or using a hand-held mixer), beat 4 ounces of room-temperature brick-style cream cheese until it’s wonderfully smooth and creamy. Gradually add 1/4 cup of Nutella (or homemade Notella) and mix on low speed until the two are fully combined, creating a luscious chocolate-hazelnut cream.
- **Layer the Flavors:** Using a spoon, randomly dollop spoonfuls of the Nutella cream cheese mixture over the bread cubes in the pan. Next, scatter the 1-inch cubed ripe pears generously throughout the pan, distributing them evenly. Finally, spread the remaining bread cubes on top of the pear and Nutella layers.
- **Pour the Custard:** In a large bowl, whisk together 4 large eggs, 1 cup of milk, 1/3 cup of brown sugar, 2 teaspoons of vanilla extract, and 1/2 teaspoon of cinnamon. Whisk until there are no large lumps and the mixture is well combined. Carefully pour this egg mixture evenly over all the bread and pear layers in the pan, ensuring every piece of bread is drenched.
- **Chill Overnight:** Cover the pan tightly with plastic wrap or aluminum foil. Place it in the refrigerator to chill for at least 4 hours, or ideally, overnight. This crucial step allows the bread to fully absorb the custard, leading to that incredible custardy texture.
Morning Bake
- **Preheat and Bake:** When you’re ready to bake and enjoy your breakfast, remove the casserole from the refrigerator. Preheat your oven to 350°F (175°C). Discard the plastic wrap or foil.
- **Golden Perfection:** Bake the casserole for 30-35 minutes, or until the top is golden brown and the center is set. A knife inserted into the center should come out clean.
- **Serve and Enjoy:** Once baked, remove from the oven. For an extra touch of indulgence (and those ultimate “ooohs and aaahs”), drizzle with additional Nutella just before serving. Serve immediately and watch it disappear!

Tips for Serving and Enjoying Your French Toast Casserole
While this Nutella Pear French Toast Casserole is spectacular on its own, a few extra touches can make it even more memorable. For a truly professional presentation, dust with a sprinkle of powdered sugar just before serving. A dollop of freshly whipped cream or a scoop of vanilla ice cream can also add a delightful contrast to the warm, rich casserole.
Pair it with a side of crispy bacon or sausage for a complete brunch experience, or a fresh fruit salad to add a lighter, refreshing element. The beauty of this dish is its versatility. It can be the star of a grand brunch spread or a comforting centerpiece for a quiet family breakfast.
Got leftovers? Lucky you! This casserole keeps beautifully. Simply transfer any remaining portions to an airtight container and refrigerate for up to 3 days. Reheat gently in the microwave or oven until warm, and enjoy its deliciousness all over again!

Frequently Asked Questions (FAQ) about French Toast Casseroles
Can I use different fruits in this French toast bake?
Absolutely! While pears are fantastic, this recipe is highly adaptable. Apples, peaches, berries (fresh or frozen), or even bananas would make excellent substitutes or additions. Adjust cooking time slightly if using very juicy fruits like berries, as they release more liquid.
How long can the casserole sit in the refrigerator before baking?
The ideal chilling time is overnight, or at least 4 hours. You can safely leave it in the refrigerator for up to 24 hours. The longer it soaks, the more flavorful and custardy the bread becomes.
Can I double this recipe for a larger crowd?
Yes, this recipe is perfect for doubling! Simply double all the ingredient quantities and use a larger 9×13 inch baking pan. The baking time might need to be extended slightly, usually to 40-50 minutes, but always check for a golden top and set center.
Can I freeze the French toast casserole?
While you can freeze baked French toast casserole, it’s generally best enjoyed fresh or from the fridge. If freezing, allow it to cool completely, then wrap tightly in plastic wrap and aluminum foil. It can be stored for up to 1-2 months. Thaw in the refrigerator overnight before reheating.
