Dreaming of Paradise: My Hawaiian Inspiration

There’s something truly magical about Hawaii. Right now, in the depths of winter, my mind drifts to images of pristine beaches, swaying palm trees, and the endless blue of the Pacific Ocean. Hawaii isn’t just a destination for me; it’s a feeling, a place I return to again and again because it consistently delivers pure joy and relaxation. As someone who loves to explore new corners of the globe, it speaks volumes that Hawaii remains one of the few places I’m always eager to revisit. The weather is perpetually perfect, the beaches are breathtakingly beautiful, and there’s a comforting sense of safety and predictability that, especially with kids, is exactly what I crave in a vacation.

Our initial trip with our eldest, Oscar, to Kauai when he was a mere three months old was, admittedly, a learning experience. As new parents, we were undeniably bold, perhaps even a little naive. The trip wasn’t without its challenges – I battled a head cold that left me practically deaf, Oscar refused the hotel crib (leading to an emergency portable swing purchase at Walmart!), and our activities were understandably constrained by a baby’s nap schedule and early bedtime. Plus, the wind! It was ridiculously, unexpectedly windy. But even amidst these rookie parent struggles, the raw beauty of Kauai left an indelible mark.

Our next Hawaiian adventure took us to Maui when Oscar was 16 months old, and what a difference a year makes! It was an absolute blast, a truly awesome trip filled with laughter and unforgettable moments. We had such an incredible time that we’re already envisioning a return with both boys in the near future. However, we’ve learned our lesson and will patiently wait until Wally is old enough to fully appreciate and enjoy the island paradise. These cherished memories of Hawaii, its vibrant culture, and its laid-back spirit are precisely what inspired this recipe, bringing a taste of the islands right into our home, no matter the season.

The primary reason is the requirement for pineapple juice to form the base of our irresistible sweet and sour sauce. Canned pineapple in juice provides exactly what you need, making the preparation seamless.

However, if you’re a purist and prefer the taste and texture of fresh pineapple, you absolutely can use it! Just be sure to source an alternative for the pineapple juice. You’ll need about 1 ½ cups of pure pineapple juice to achieve the perfect balance in the sauce. For the fruit itself, whether you choose fresh or canned, I generally prefer pineapple chunks for their satisfying bite, but tidbits work just as well if you prefer smaller pieces. The goal is to have those juicy, sweet pieces mingling with the savory meatballs.

Once your meatballs are thoroughly cooked and glistening, gently add them into the rich, thickened sauce, along with the reserved pineapple chunks.   • 1 egg
  • 1/2 inch piece grated fresh ginger
  • 1/2 tsp Worcestershire sauce
  • 1/4 cup milk
  • 1/2 tsp salt

Sauce

  • 1 – 14oz can pineapple chunks (in pineapple juice)**
  • 1/3 cup white vinegar
  • 1/2 cup brown sugar, lightly packed
  • 1 tbsp soy sauce
  • 2 tbsp cornstarch + 2 tbsp water (for slurry)

Instructions

  1. Preheat oven to 375 F and line a large baking sheet with a silicone mat or parchment paper. I like to place a wire rack on top of the pan for even cooking and air circulation.
  2. Combine all of the meatball ingredients in a large bowl, using a spoon or your hands, being careful not to overmix. Roll the mixture into meatballs, aiming for approximately 2 tablespoons each to ensure uniform size and cooking time. Place the meatballs on the lined baking sheet and transfer to the preheated oven for 20 minutes, or until they are beautifully browned and cooked through, rotating halfway through for even browning.
  3. While the meatballs are cooking, prepare the vibrant sweet and sour sauce. Open the can of pineapple chunks and carefully drain the juice into a medium saucepan; be sure to reserve the pineapple chunks for later. Whisk in the remaining sauce ingredients, which include white vinegar, brown sugar, and soy sauce (excluding the cornstarch slurry for now). Heat the sauce over medium-high heat until it begins to simmer gently. Once simmering, add in the cornstarch slurry and stir continuously until the sauce visibly thickens and becomes bubbly and glossy. Keep the sauce warm until the meatballs are finished cooking.
  4. Once the meatballs are thoroughly cooked and browned, add them directly into the warm sauce, along with the reserved pineapple chunks. Gently combine everything, ensuring the meatballs and pineapple are well coated in the delicious sauce. Serve immediately over rice or another grain of your choice, such as quinoa or cauliflower rice. Garnish generously with fresh cilantro and a sprinkle of sesame seeds for an added touch of flavor and visual appeal.

Leftover meatballs with sauce can be stored in an airtight container in the refrigerator for up to 3 to 4 days, making them perfect for meal prep.

** If you prefer not to use canned pineapple, you can certainly use fresh pineapple chunks. In this case, you will need to provide about 1 1/2 cups of pineapple juice from another source for the sauce. You can also use pineapple tidbits instead of chunks, based on your preference!
