Pavlova is popular for warm-weather holidays in the Southern Hemisphere, but its fresh flavors make it a great choice for springtime celebrations anywhere.

What You’ll Need

This pavlova recipe uses just a few basic ingredients and yields beautiful, delicious nests.

For the Pavlova:

How to Make Pavlova

These instructions explain how to make mini nests; you can scale or adapt them to one larger pavlova if preferred.

  • Prepare the egg whites. Separate 6 egg whites into a clean, dry bowl and let them come to room temperature (about 20 minutes).
  • Preheat and prepare. Preheat the oven to 225°F (110°C). Line two baking sheets with parchment paper and fit a piping bag with a large tip.
  • Whip the egg whites. Using a stand or handheld mixer, beat the egg whites on high until soft peaks form (1–2 minutes).
  • Add the sugar. With the mixer running, add sugar gradually until dissolved. Continue beating on high for 6–8 minutes until the mixture is glossy and holds stiff peaks.
  • Fold in stabilizers. Gently fold in the lemon juice, vanilla, and cornstarch. Transfer the meringue to the piping bag.
  • Pipe nests. Pipe 3-inch rounds on the prepared parchment, creating a slight well in the center with the back of a spoon. You should get about 12–15 nests depending on size.
  • Bake and cool. Bake for 1 hour at 225°F. Turn the oven off and leave the door closed for at least 30 minutes to cool slowly, then transfer to a wire rack to cool completely.
  • Make whipped cream. Just before serving, whip the chilled heavy cream with 2 tablespoons sugar on high until stiff peaks form (2–3 minutes).
  • Assemble. Spoon about 1 tablespoon of strawberry jam into each nest, pipe or dollop whipped cream on top, and finish with half a fresh strawberry. Dust with powdered sugar if desired.

Shaping the Pavlova

For filled pavlovas, create small nests with a shallow indentation to hold jam and cream. You can also pipe rounds, domes, or a flat tray-style pavlova with a raised rim—choose the shape that suits your presentation.

How Do You Know When a Pavlova is Done?

A properly cooked pavlova is crisp and dry on the outside and easily lifts away from the parchment. If the surface feels firm and dry and peels off cleanly, it’s done. Undercooked pavlova will feel sticky and may not separate from the paper.
