Recipe Ingredients

Below are the key ingredients for this smothered chicken. Refer to the recipe card for exact amounts and complete directions.

For the Chicken

  • Chicken breasts – Boneless, skinless breasts work well; other cuts can be used (see note).
  • Bacon – Use some bacon grease for flavor and reserve cooked bacon for garnish.
  • Egg – Helps the coating adhere to the chicken.
  • Buttermilk – Adds tang to the coating; whole milk can be substituted.
  • All-purpose flour – Used in the coating and also to help thicken the gravy.
  • Breadcrumbs – Plain or seasoned breadcrumbs both work.
  • Italian seasoning – Substitute dried oregano and basil if needed.
  • Garlic powder – For mild garlic flavor in the coating.
  • Salt and pepper – Kosher salt and black pepper recommended.
  • Vegetable oil – For frying the chicken.

For the Gravy

  • Unsalted butter – Use unsalted to better control seasoning.
  • Shallot – Swap a small yellow onion if you don’t have a shallot.
  • Garlic – Fresh minced garlic enhances the sauce; garlic powder works in a pinch.
  • All-purpose flour – For the roux that thickens the gravy.
  • Chicken stock – Regular or low-sodium broth both work.
  • Half-and-half – For a rich, creamy gravy. Whole milk can be used as an alternative.
  • Worcestershire sauce – Adds depth and umami.
  • Salt and pepper – To taste.
  • Fresh parsley – For color and brightness when serving.

Can I Use Other Cuts of Chicken?

Yes. This method works with thighs, drumsticks or bone-in breasts. Breasts are pounded for even thickness and quick cooking; if you choose thighs or drumsticks, skip the pounding step and allow extra cooking time as needed.

  • Pound the chicken. Place each breast between plastic wrap and pound to an even thickness.
  • Cook the bacon. Fry diced bacon until crisp, reserve about 1/4 cup bacon grease, and remove the cooked bacon for garnish.
  • Prepare the dredging stations. Whisk egg and buttermilk in one bowl. Combine flour, breadcrumbs, Italian seasoning, garlic powder, salt and pepper in another.
  • Coat the chicken. Dip chicken first in the breadcrumb mixture, then the egg wash, and again in the breadcrumb mixture to form a sturdy crust.
  • Fry the chicken. Heat oil plus the reserved bacon grease to about 1/2 inch depth. Fry chicken 3–4 minutes per side, until golden and cooked through. Transfer to a paper-towel-lined plate.
  • Sauté the aromatics. Reduce heat to medium, melt butter, then sauté shallot until translucent. Add garlic and cook briefly until fragrant.
  • Make a roux. Whisk the flour into the pan and cook for about 30 seconds to remove the raw flour taste.
  • Build the gravy. Whisk in chicken stock, simmer until it begins to thicken, then stir in half-and-half and Worcestershire sauce. Cook until the gravy reaches a smooth, spoonable consistency and season to taste.
  • Finish and serve. Return the chicken to the skillet, spoon the gravy over each piece, and let rest a few minutes. Garnish with chopped parsley and the reserved bacon.

Tips for Success

Pounding the chicken ensures tenderness and even cooking. Additional tips:

  • Check doneness with a thermometer. Insert an instant-read thermometer into the thickest part; chicken is safe at 165°F.
  • Cook the flour fully. Whisk and cook the roux briefly so the gravy doesn’t taste of raw flour; it should take on a light color before adding stock.
  • Omit the bacon if desired. If you skip bacon, substitute about 1/4 cup melted butter or olive oil for the reserved grease.
  • Make it gluten-free. Use gluten-free flour and breadcrumbs to adapt this recipe.

Serving Suggestions

  • Rice. Plain white rice soaks up the gravy nicely.
  • Mashed potatoes. Classic mashed potatoes are ideal for serving with the creamy gravy.
  • Simple vegetables. Steam or roast green beans, carrots, or a side of roasted sweet potatoes to balance the richness.

How To Store & Reheat Leftovers

  • Fridge. Transfer cooled chicken and gravy to an airtight container and refrigerate up to 3 days.
  • Reheat. Microwave covered in short intervals until heated through, or reheat gently on the stovetop over low heat, stirring occasionally.
