These sea salt caramel chocolate chip cookies are just like your favorite classic soft, chewy chocolate chip cookie, but with the added bonus of sea salt caramel baking chips!
Ingredients

- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cornstarch
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg, room temperature
- 1 tsp pure vanilla extract
- 1/2 cup sea salt caramel chips*
- 1/2 cup semi-sweet chocolate chips
Instructions
- In a large mixing bowl, combine the flour, baking soda, salt, and cornstarch. Whisk them together thoroughly and set aside.
- In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld electric mixer), beat the room temperature unsalted butter for about 1 minute until it’s light and fluffy. Add both the brown sugar and granulated sugar, mixing until they are well combined and the mixture is creamy. Incorporate the room temperature egg and pure vanilla extract, mixing until everything is fully blended. With the mixer running on low speed, slowly add the dry ingredients into the wet ingredients, mixing just until combined. Be careful not to overmix. Finally, add the sea salt caramel chips and semi-sweet chocolate chips. Gently mix by hand with a large wooden spoon (my preferred method) or on the lowest mixer setting until the chips are just distributed. Cover the dough tightly with plastic wrap and chill it in the refrigerator for a minimum of 1 hour, and up to 3 days. - Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or a silicone baking mat. Using approximately 1.5 tablespoons of dough for each cookie, roll the dough into uniform balls.
