It feels like ages since I last shared a baked oatmeal recipe, and believe me, that wasn’t intentional! I had grand plans to bring this particular gem to you before Easter this year, but with everything happening, that holiday truly snuck up on me. Nevertheless, it’s still springtime, and honestly, the comforting flavors of carrot cake are a delight any time of year. This isn’t just another oatmeal recipe; it’s a breakfast experience that brings warmth and a touch of sweetness to your table.
Last week, I confessed to feeling a bit overwhelmed, but I’m thrilled to report that a glorious weekend filled with sunshine and pure relaxation has completely rejuvenated me. It’s amazing what a little downtime can do! Oscar is now a pro at his virtual lessons, and I’ve successfully found a more relaxed pace for managing the blog. It feels like I’ve finally struck a happy medium that’s sustainable for the foreseeable future, allowing me to focus on bringing you more delicious and wholesome recipes like this one.
Oh, and on a completely unrelated note, have you watched the third season of Ozark yet? The ending was absolutely mind-blowing! So good.
Alright, let’s dive back into the delicious world of food.

Is This a Truly Healthy Baked Oatmeal Recipe?
Absolutely, yes! But let’s clarify what makes this carrot cake baked oatmeal a fantastic, healthy choice. The core of this recipe is incredibly wholesome. We steer clear of refined sugars, opting for natural sweeteners like honey or maple syrup. What’s more, it’s crafted to be completely gluten-free and dairy-free from its base, catering to various dietary needs without compromising on flavor or texture. Plus, with just two tablespoons of coconut oil in the entire dish, it keeps things light while still delivering a remarkably creamy and incredibly delicious oatmeal experience.
Now, here’s where you can add a touch of indulgence if you wish! While the base is undeniably healthy, we love to crown this baked oatmeal with a decadent cream cheese icing. It’s not a mandatory step, but it certainly elevates the flavor profile, adding that classic carrot cake essence that everyone adores. After all, what is carrot cake without its signature cream cheese topping? If you prefer to keep it entirely dairy-free or just want a lighter alternative, I’ve also made this with a coconut whip topping, which was equally delightful and adds a tropical twist.
The Nutritional Benefits of Baked Oatmeal
Beyond being delicious, this healthy baked oatmeal offers a wealth of nutritional advantages. Oats are a fantastic source of soluble fiber, which is known to help lower cholesterol levels and promote healthy digestion. Carrots, of course, are packed with beta-carotene, an antioxidant that converts to Vitamin A in the body, essential for vision and immune function. The inclusion of walnuts or pecans adds healthy fats, protein, and more fiber, contributing to satiety and overall heart health. Choosing coconut oil adds medium-chain triglycerides (MCTs), which can provide a quick source of energy. By opting for natural sweeteners and customizing your milk choice, you create a breakfast that fuels your body and mind without the sugar crash.
How Long Does It Take to Make Carrot Cake Baked Oatmeal?
Preparing this delightful carrot cake baked oatmeal is surprisingly quick and efficient. From start to finish, the recipe requires approximately 10-15 minutes of active preparation time, followed by a convenient 25-30 minute bake time in the oven. This makes it an ideal option for busy mornings, especially if you leverage some clever meal planning strategies.
When I’m in my meal planning groove, I like to get a head start the night before. This involves shredding my carrots and pre-measuring and combining all the dry ingredients into one bowl. This simple step can shave off precious minutes from your morning routine. Then, while the oatmeal is warmly baking away in the oven, filling your kitchen with an incredible aroma, I use that time to whip up the cream cheese icing and get my coffee brewing. It’s a perfectly orchestrated morning ritual that ensures a delicious breakfast with minimal fuss.
Step-by-Step Preparation Flow
To begin, you’ll whisk together all your dry ingredients in one large bowl. In a separate, microwave-safe bowl, gently melt the coconut oil, then incorporate your wet ingredients such as honey (or maple syrup), egg, and vanilla extract, whisking them thoroughly to combine. This separation of wet and dry ensures even mixing and a perfect texture every time.

Once both mixtures are ready, gently combine the dry ingredients with the wet, adding in your freshly shredded carrots and chopped nuts. Stir until just combined, being careful not to overmix. Then, press the mixture evenly into a lightly greased baking dish. For best results with this recipe, an 8×8-inch square baking pan or a 9-inch pie plate works wonderfully, yielding perfectly portioned servings.
If you’re hosting a brunch or simply want to ensure you have plenty of this deliciousness throughout the week for easy meal prep, you can easily double the recipe. A 9×13-inch pan is the perfect size for a double batch, providing ample servings to feed a crowd or to enjoy as a convenient breakfast staple for days on end.
Bake the oatmeal for the specified 25-30 minutes, or until the center is no longer wet and jiggly. A quick, gentle shake of the pan is usually enough to confirm it has set beautifully. The edges should be lightly golden, and the aroma will be simply divine.

Can You Make This a Vegan Baked Oatmeal?
Yes, absolutely! Transforming this recipe into a completely vegan baked oatmeal is very straightforward, requiring just a couple of simple substitutions. The main non-vegan components in the original recipe are the egg and, of course, the cream cheese in the icing. With easy swaps, you can enjoy all the delicious flavors while adhering to a vegan diet.
For the egg, a flax egg is your perfect plant-based alternative. If you’re new to making flax eggs, they’re incredibly simple: just combine ground flaxseed meal with water and let it sit for a few minutes until it thickens into a gel-like consistency, mimicking the binding properties of a traditional egg. It works beautifully in baked goods like this oatmeal. The link provided offers a great guide on how to prepare one.
Regarding the cream cheese icing, as mentioned earlier, you have a couple of fantastic vegan options. My personal go-to for a dairy-free topping is a light and fluffy coconut whip. It adds a subtle tropical note that complements the carrot cake flavors wonderfully. Alternatively, if you’re craving that classic tangy cream cheese experience, I’ve discovered a fantastic-looking recipe for vegan cream cheese frosting on the Minimalist Baker’s site. While I haven’t tried it myself yet, their recipes are always reliable, so please do let me know if you give it a go!

Meal Prepping and Storage Tips for Baked Oatmeal
One of the many fantastic aspects of this carrot cake baked oatmeal is how well it holds up for meal prepping. Once baked and cooled, it can be stored in an airtight container in the refrigerator for 4-5 days, making it an ideal grab-and-go breakfast for busy weekdays. To reheat, simply portion out a square and warm it in the microwave. I often like to add a little extra drizzle of maple syrup on top before serving, which reactivates some of its moisture and sweetness.
While I haven’t personally tried freezing this specific recipe, I strongly suspect it would freeze exceptionally well. You could bake the entire batch, let it cool completely, then cut it into individual servings. Wrap each portion tightly in plastic wrap, then place them in a freezer-safe bag or container. When you’re ready to enjoy, simply thaw a portion overnight in the fridge and reheat as usual. This makes for an incredibly convenient and wholesome freezer-friendly breakfast option.
We’ve had such a lovely stretch of sunny weather lately, and I’m genuinely hoping for a repeat this upcoming weekend. Now that I’ve had a taste of that glorious sun, going back to chilly weather feels almost unbearable!

Carrot cake baked oatmeal is the perfect way to wake up! Make a double batch of this healthy baked oatmeal to last all week long. If you love carrot cake oatmeal you will love this breakfast!
Ingredients
Scale
- 2 cups old fashioned (large flake) oats
- 1 tsp baking powder
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 tbsp coconut oil (or butter)
- 1/3 cup honey (or maple syrup)
- 1 egg
- 1 tsp pure vanilla extract
- 1 1/2 cups milk*
- 1 cup shredded carrots (~2 small carrots)
- 1/2 cup chopped walnuts (or pecans)
Cream Cheese Icing
- 2 oz cream cheese, softened to room temperature
- 1/2 cup powdered sugar
- 1 tbsp heavy cream or milk, for thinning
Instructions
- Preheat the oven to 350 F and grease a 9″ pie plate or 8×8″ baking dish. In a large mixing bowl, whisk together the oats, baking powder, nutmeg, cinnamon, and salt. In another microwave-safe bowl, heat the coconut oil until melted. Add the honey, egg and vanilla extract and whisk thoroughly. Whisk in the milk.
- Pour the wet ingredients into the dry, along with the shredded carrots and chopped nuts. Stir to combine, then empty everything into the greased baking dish. Use a spoon to gently press it all down. Bake the oatmeal for 25-30 minutes, or until the middle of the oatmeal no longer jiggles when you give it a light shake. Remove and let stand for 5 minutes.
- Prepare the cream cheese frosting: In a stand mixer fitted with the paddle attachment, or using a handheld electric mixer, beat the softened cream cheese for 1 minute on high, until smooth. Add the powdered sugar and the cream and mix again until smooth. Add either more powdered sugar, or more cream to get the desired consistency.
- Drizzle the frosting all over the oatmeal and serve immediately.
Leftover oatmeal can be stored in an airtight container, in the fridge, for 4-5 days. Reheat portions of the oatmeal in the microwave.
Notes
*You can use any milk (dairy, non-dairy) you prefer. Using coconut milk will give this oatmeal more of a coconut flavor, which would be just fine in this recipe!
**To double the recipe, use a 9×13″ baking dish.
