Crafting this unique pizza crust begins with the star ingredient: zucchini. You will need approximately 2 cups of shredded zucchini, but here’s the crucial part – it must be thoroughly squeezed and firmly packed down. Why the rigorous squeezing, you ask? If you’ve never had the pleasure of cooking with zucchini before, you’d be utterly astonished by the sheer volume of moisture hidden within those green giants. Skipping this essential step is the surest path to a soggy, disappointing crust.
My preferred method for extracting all that excess liquid is to shred the zucchini directly into a clean cheesecloth or a sturdy old kitchen towel. However, if it still feels a bit soft or appears pale, don’t hesitate to pop it back into the oven for an additional 8-10 minutes. This extra baking time ensures a robust, non-soggy base ready to support all your delicious additions.

Ingredients
- 2 cups grated zucchini (squeezed well and packed down)
- 1/3 cup shredded mozzarella cheese
- 1/3 cup shredded parmesan cheese
- 2 large eggs, beaten
- 1/4 cup almond flour*
- 1 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C). Spread a large piece of parchment paper on top of a baking sheet or pizza pan (I use a 12″ pizza pan) and spray it with non-stick cooking spray. Set aside.
- In a large bowl, combine the thoroughly shredded and squeezed zucchini (refer to the notes in the post above for vital tips on this step) with both cheeses, the beaten eggs, almond flour, and olive oil. Mix all ingredients exceptionally well until fully combined.
- Evenly spread the mixture onto the greased parchment paper, smoothing it out until it completely covers the surface in an even layer. Bake for 25 minutes.
- Remove the pizza from the oven. Carefully slide one hand under the parchment paper (taking extreme caution not to touch the hot pan) and swiftly flip the crust directly back onto the baking pan. If the top of the crust (which was previously the bottom) feels fairly firm and has achieved a pleasant brown color, you may proceed with adding your toppings. If you feel it could benefit from additional baking, return it to the oven for another 8-10 minutes until desired firmness is reached.
- Reduce the oven temperature to 375°F (190°C). Generously top the pizza with your preferred ingredients! For ours, we used a base of tomato paste, shredded mozzarella, sweet pineapple chunks, savory mushrooms, colorful diced peppers, fresh parsley, and some mysterious chili peppers from the garden. Return the pizza to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly and the toppings are heated through. Remove and serve immediately.
This delicious pizza will keep well in an airtight container in the fridge for 3-4 days, making for excellent leftovers.
Notes
- If maintaining a gluten-free diet is not a concern for you, feel free to substitute the almond flour with regular all-purpose flour. The recipe will still yield a fantastic crust.
