My children frequently ask me about my favorite food. As a passionate foodie, it’s nearly impossible to pick just one dish, but my answer almost always leans towards “Thai food.” The complexity and balance of sweet, sour, salty, and spicy notes are simply captivating. A versatile red Thai curry paste isn’t just for curries; it can elevate so many dishes, and when combined with succulent ground turkey, it creates an extraordinary summer meal that’s both flavorful and surprisingly easy to prepare.

Why These Thai Turkey Burgers Are a Must-Try
Beyond their incredible taste, these Thai Turkey Burgers offer a fantastic blend of health benefits and culinary versatility. They’re a brilliant alternative to traditional beef burgers, offering a lighter yet equally satisfying experience. The fusion of lean turkey with aromatic Thai ingredients creates a unique profile that’s both comforting and exciting. Whether you’re hosting a backyard barbecue, planning a weeknight dinner, or looking for an impressive meal prep option, these burgers deliver on all fronts.
The beauty of this recipe lies in its balanced flavors. The savory richness of peanut butter, the fiery kick of red curry, the zing of lime, and the freshness of ginger all come together to create a symphony for your palate. Plus, incorporating fresh vegetables like shredded cabbage and carrots not only adds delightful texture but also boosts the nutritional value of your meal, making it a truly wholesome choice.
Essential Ingredients for Your Thai Turkey Burgers
Preparation is key to any successful recipe. Gathering your ingredients ahead of time ensures a smooth and enjoyable cooking process. For these delectable Thai turkey burgers, you’ll need a carefully selected list of components that contribute to their unique and robust flavor profile:
- Ground Turkey: The lean and versatile base for our burgers. Opt for a good quality ground turkey from trusted sources like Alberta Turkey for the best flavor and texture.
- Diced Green Onions: Adds a mild, fresh onion flavor and a pop of color to the patties.
- Panko Breadcrumbs: Essential for binding the patties and providing a tender texture without making them dense.
- Natural Peanut Butter: A critical ingredient for that rich, nutty flavor and a touch of sweetness that perfectly complements the Thai spices. It also helps bind the patties and keeps them moist.
- Thai Red Curry Paste: The heart of the Thai flavor! This paste brings together a complex blend of chilies, lemongrass, galangal, and other spices, delivering authentic heat and aroma.
- Fresh Garlic Cloves, Minced: Provides a pungent, savory depth that is foundational to many Asian cuisines.
- Lime (Zest and Juice): The zest offers an intense citrus aroma, while the juice adds a bright, acidic counterpoint that balances the richness of the peanut butter and the spice of the curry.
- Fresh Ginger, Minced: Contributes a warm, spicy, and slightly sweet note that is unmistakably Thai.
- Sesame Oil: Used for frying, it imparts a distinct nutty flavor to the exterior of the burgers.
- Mayonnaise: Forms the creamy base for our irresistible burger sauce.
- Thai Sweet Chili Sauce: Adds a sweet, tangy, and mildly spicy element to the sauce, making it incredibly addictive.
- Burger Buns: Your preferred choice, whether brioche, whole wheat, or classic sesame seed buns.
- Shredded Green Cabbage: Provides a refreshing crunch and a hint of bitterness to balance the rich flavors.
- Shredded Carrot: Adds natural sweetness and vibrant color, enhancing the texture of the burger.
- Salted, Roasted Peanuts: A final flourish for texture and a savory, salty crunch that ties all the flavors together.

Are Turkey Burgers Healthy? A Nutritional Breakdown
Absolutely! Not only do these Thai Turkey Burgers boast an incredible flavor, but they are also a remarkably healthy meal choice. Turkey is a lean protein source, containing significantly less saturated fat compared to traditional beef burgers. In fact, ground turkey is rich in polyunsaturated fats, which are considered a healthier type of fat that can contribute to overall well-being.
Beyond the lean protein, these burgers are designed to be a complete meal. When assembled with the vibrant shredded cabbage and carrots, you’re effortlessly incorporating a generous portion of your daily vegetable servings. This combination provides essential vitamins, minerals, and fiber, contributing to a balanced diet and sustained energy. Choosing turkey burgers means you can indulge in a delicious, satisfying meal without compromising your health goals.
Crafting the Perfect Patties: Preventing Thai Turkey Burgers from Falling Apart
One common concern with turkey burgers is their tendency to crumble, but with a few simple techniques, you can ensure your Thai Turkey Burgers stay perfectly intact. While many traditional burger recipes rely on eggs and breadcrumbs as binders, we’ve found that the combination of Panko breadcrumbs and natural peanut butter in this recipe effectively holds the patties together. The peanut butter, in particular, adds moisture and a sticky quality that helps create a cohesive patty.
The key to preventing these flavorful burgers from falling apart lies in careful handling. When forming the patties, make sure to pack the meat mixture tightly between your hands, creating a firm and uniform disc. During cooking, exercise a bit of caution when flipping them. Instead of grilling, we recommend cooking these burgers in a frying pan on the stove. This method not only helps the patties retain their moisture but also prevents them from falling through grill grates, ensuring a perfectly cooked and intact burger every time.
How to Make These Exotic Thai Turkey Burgers
From start to finish, these delicious burgers can be on your table in approximately 20-25 minutes, making them an ideal choice for a quick yet gourmet meal. You can streamline the process even further by doing some prep work in advance, such as shredding the cabbage and carrots, mixing the mayo and sweet chili sauce, and mincing the garlic and ginger.
- Prepare the Patty Mixture: In a large mixing bowl, combine the ground turkey, finely diced green onions, Panko breadcrumbs, natural peanut butter, Thai red curry paste, minced garlic, fresh lime juice and zest, and the finely grated ginger. Use your hands or a sturdy spoon to gently but thoroughly mix all the ingredients until they are well combined. Be careful not to overmix, as this can lead to tougher burgers.
- Form the Patties: Line a baking sheet with parchment paper. Divide the turkey mixture into four equal portions. While a kitchen scale can ensure exact sizing, simply eyeballing it works just fine. Take each portion and roll it into a ball, then gently flatten it with your hands into a patty shape, roughly 1 inch thick. Place all four formed patties on the parchment-lined baking sheet.

- Heat the Pan: Place a large frying pan (a 12-inch pan typically fits all four patties without crowding) on the stove over medium heat. Add the sesame oil and let it heat for 1-2 minutes until it shimmers. If you’re using a smaller pan, you might need to cook the burgers in two batches, using half the oil for each batch.
- Cook the Burgers: Carefully place the turkey patties into the hot pan. Fry them for at least 4-5 minutes on one side, or until they develop a beautiful crispy, golden-brown crust. Gently flip them over and cook for an additional 4-5 minutes, or until an instant-read meat thermometer inserted into the center of a patty registers 160°F (71°C).
- Prepare the Buns and Toppings: While the burgers are cooking, combine the mayonnaise and Thai sweet chili sauce in a small dish and stir well. If desired, lightly toast your burger buns in a toaster or directly in the pan for a minute or two until golden. Spread a generous amount of the prepared sauce on both halves of each bun. On the bottom half of the buns, layer the shredded green cabbage, shredded carrot, and a tablespoon of salted, roasted peanuts.
- Assemble and Serve: Once the burgers are thoroughly cooked, place one patty on the prepared bottom half of each bun. Top with the other half of the bun, and serve immediately. Enjoy your homemade, flavorful Thai Turkey Burgers!

Can You Freeze Turkey Burgers? Meal Prep Made Easy!
Absolutely! These Thai Turkey Burgers are excellent for meal prepping and can be frozen in two convenient ways: either before cooking or after they’ve been fully cooked. This makes them a fantastic option for busy weeknights or when you want to have a delicious meal ready to go with minimal effort.
- Freezing Uncooked Patties: To freeze patties before cooking, form them as instructed and place them on a parchment-lined baking sheet. Transfer the baking sheet to the freezer for 20-30 minutes, or until the patties are completely solid. This flash-freezing technique prevents them from sticking together. Once frozen, transfer the individual patties to a freezer-safe ziploc bag or an airtight container, ensuring they are separated by parchment paper to prevent sticking. They can be stored for up to 2 months. When you’re ready to cook, thaw the patties overnight in the refrigerator, or cook them directly from frozen over a lower heat setting, adjusting cooking times accordingly to ensure they reach 160°F (71°C) internally.
- Freezing Cooked Patties: If you’ve already cooked a batch and have leftovers, simply allow the burger patties to cool completely to room temperature. Once cooled, place them in a freezer-safe bag or airtight container. Cooked turkey burgers can be frozen for up to 2 months. To reheat, you can use a frying pan, oven, or microwave until heated through. Reheating in a pan helps retain some of their original crispy texture.

Description
These Thai turkey burgers are packed with flavor and wholesome ingredients, making them an incredible, hearty, and filling meal. A definite must-try!
Ingredients
Scale
- 1 lb ground turkey
- 2 green onions, finely diced
- 1/4 cup Panko breadcrumbs
- 2 tbsp natural peanut butter
- 2 tsp Thai red curry paste
- 2 cloves garlic, minced
- 1 tsp fresh lime juice
- 1 tsp fresh lime zest
- 1 tbsp finely grated ginger*
- 2 tbsp sesame oil
- 1/4 cup mayonnaise
- 3 tbsp Thai sweet chilli sauce
- 4 large burger buns
- 1/2 cup shredded green cabbage
- 1/2 large carrot, shredded
- 1/4 cup salted, roasted peanuts
Instructions
- In a large mixing bowl, combine the ground turkey with the green onions, Panko crumbs, peanut butter, Thai curry paste, minced garlic, lime juice and zest, and the grated ginger. Stir everything together until well combined.
- Line a baking sheet with parchment paper, then divide the turkey mixture into 4 equal sized portions (it doesn’t have to be exact). Form a ball with each of the individual portions, and lightly flatten it into the shape of a patty, using your hands. Place all 4 patties on the parchment lined baking sheet.
- In a large frying pan on the stove, heat the sesame oil over medium heat for 1-2 minutes or until it is shimmering.
- If you can fit them all at once without touching, place all 4 patties into the pan at once; however, if you can only fit 2 at a time, you can do this in batches. Fry the patties on one side for at least 4-5 minutes or until crispy and brown on one side, before carefully flipping them to the other side and frying for an additional 4-5 minutes or until a thermometer inserted in the center of the patties reads 160 F.
- While the patties are frying, mix together the mayo and sweet chilli sauce together in a small dish. Apply a generous amount of the sauce over all sides of each of the burger buns. On the bottom portion of the buns, add the green cabbage, shredded carrot and about a tablespoon of roasted peanuts.
- Once the burgers are cooked through, place one burger on the prepared bottom half of each bun. Top it with the top half of the bun, and enjoy!
Leftover burger patties can be frozen for up to 2 months in an airtight container. See the blog post above for further freezing instructions.
Notes
*Replace the fresh ginger with 1/2 tsp ground ginger if you don’t have fresh on hand.
**For a little extra heat, try some sriracha hot sauce in the prepared burger!
