Summer is a season meant for embracing joy, and for me, that absolutely includes indulging in delicious treats. While I adore fresh berries and juicy stone fruits, nothing quite says summer like a generous scoop (or two!) of ice cream.

Ever since I discovered the magic of making ice cream using the no-churn method, my freezer is rarely without a pint. You can certainly use your favorite store-bought caramel, and I promise not to tell anyone! For an extra special touch, I always opt for my trusty salted caramel sauce recipe – it adds a depth of flavor that’s simply divine.

The Simple Steps to Perfect Rolo Ice Cream:

  1. **Whip the Cream:** Begin by whipping heavy cream until it starts to thicken. This creates the light, airy base for your ice cream.
  2. **Introduce the Cocoa:** Halfway through the whipping process, once the cream holds soft peaks, gently incorporate the cocoa powder. This ensures a rich, chocolatey foundation. Continue whipping until it forms stiff peaks, mimicking the texture of traditional whipped cream.

Your favorite chocolate-caramel Rolo candy transformed into an incredibly easy, no-churn homemade ice cream! This recipe allows you to add as many Rolos as you desire for a truly customized and irresistible frozen treat. Perfect for summer and requires no ice cream maker!

  • 2 cups cold heavy whipping cream
  • 1/2 cup unsweetened cocoa powder
  • 1 (300 mL) can sweetened condensed milk
  • 1 cup mini Rolo pieces, roughly chopped
  • 1/2 cup caramel sauce*


Instructions

  1. Pour the cold heavy whipping cream into the bowl of a stand mixer fitted with the whisk attachment (or use a large bowl and electric hand mixer). Beat on high speed for 2-3 minutes, or until the cream begins to thicken and holds soft peaks. Reduce the mixer speed to low and gradually add the cocoa powder until fully incorporated. Increase speed to high again and continue beating for another 2-3 minutes, until the mixture is thick and fluffy, resembling whipped cream.
  2. Gently remove the bowl from the mixer. Using a rubber spatula or a large wooden spoon, carefully fold in the sweetened condensed milk until just combined. Be careful not to deflate the whipped cream.
  3. Now, fold in the chopped Rolo pieces. Pour about half of the ice cream mixture into a standard-sized loaf pan (9×5 inches) or any other freezer-safe container. Drizzle generously with half of the caramel sauce. Add the remaining ice cream mixture and drizzle with the rest of the caramel sauce. Use a knife or skewer to gently swirl the caramel through the ice cream for an appealing marbled effect.
  4. Cover the loaf pan tightly with plastic wrap or a lid. Freeze for a minimum of 5-6 hours, or preferably overnight, until the ice cream is firm.
