- 2 tbsp matcha powder*
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1/2 cup oil (grapeseed, canola)
- 3 eggs, room temperature
- 1 tbsp vanilla bean paste
- 1/2 cup buttermilk
Buttercream Frosting
- 1 1/2 cups unsalted butter, room temperature
- 6 cups powdered sugar
- 1/2 cup heavy cream
- 2 tsp vanilla bean paste (or extract)
- pinch salt
- 2 tsp matcha powder
Instructions
- Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lightly flouring them. Set aside.
- In a large mixing bowl, thoroughly whisk together the sifted all-purpose flour, baking soda, baking powder, salt, and matcha powder. Ensure there are no lumps of matcha. In the bowl of a stand mixer fitted with the paddle attachment (or using an electric hand mixer), combine the room-temperature unsalted butter and granulated sugar. Beat on medium-high speed for about 3-4 minutes until the mixture is light, fluffy, and well-creamed. Add the oil and continue mixing for another couple of minutes until fully incorporated. With the mixer running on low speed, add the eggs one at a time, allowing each to fully incorporate before adding the next. Follow with the vanilla bean paste. Periodically stop the mixer to scrape down the sides of the bowl with a rubber spatula to ensure everything is evenly mixed. Still on low speed, gradually add half of the dry flour mixture to the wet ingredients, mixing just until combined. Then, pour in the buttermilk, mixing gently. Bake the cakes for approximately 25 minutes, or until a toothpick inserted into the center of a cake comes out clean. If not, bake for an additional 2-3 minutes, checking again. Once baked, remove the cakes from the oven and let them cool in their pans on a wire rack for 5 minutes. After 5 minutes, carefully invert the cakes onto the wire rack to cool completely before attempting to frost them. Rushing this step can lead to a messy frosting application.
- Prepare the Buttercream Frosting: In the bowl of a stand mixer fitted with the paddle attachment (or using an electric hand mixer), beat the room-temperature unsalted butter on medium speed until it’s light, creamy, and fluffy – this usually takes a few minutes.
