As the holiday season draws to a close, many of us find ourselves reflecting on the delightful indulgences that come with special occasions. Just recently, our Easter weekend was filled with joy, laughter, and, admittedly, a generous amount of sweet treats. Preparing the boys’ Easter baskets was a highlight, a charming ritual that always involves a little “quality control” – ensuring every piece of candy from the Easter Bunny is perfectly delicious. This year, I particularly enjoyed adding little surprises like Hot Wheels and stickers, always keeping in mind little Wally’s precious 12 teeth! Watching the boys embark on an egg hunt with their cousins at my Mom’s house brought back a flood of cherished childhood memories. It warms my heart to see them creating their own special moments, just as I did with my cousins years ago.

And yes, the Easter dinner was, as usual, an abundant feast, completely worth every bite! If you follow me on social media, you might have caught a glimpse of the cake I baked for dessert – it turned out wonderfully! While I relish these moments of celebration and the sweet treats they bring, I’m equally ready to transition back to a routine of mindful eating and healthier choices. It’s all about balance, isn’t it? Enjoying those special occasions to the fullest, then gently steering back towards nourishing our bodies with wholesome foods.

Which brings us to this week’s focus: embracing healthier snacking options that are both delicious and easy to prepare. After a period of indulgence, there’s nothing quite like the satisfaction of a homemade, wholesome snack that truly hits the spot without being overly sweet or laden with artificial ingredients.

Why Choose Homemade Peanut Butter Granola?

Granola holds a special place in my heart as one of my all-time favorite snacks. Its delightful crunch and satisfying sweetness make it incredibly appealing, almost to the point of being a little too tempting to keep around! This is precisely why I make an effort to keep my homemade granola recipes on the healthier side, ensuring I can enjoy it guilt-free (though a few chocolate chips are always welcome!).

The Advantages of Crafting Your Own Granola

  • **Control Over Ingredients:** The biggest benefit of homemade granola is knowing exactly what goes into it. Unlike many store-bought varieties that often contain excessive amounts of refined sugar, unhealthy oils, and artificial flavors, you have complete control over the quality and quantity of each ingredient.
  • **Reduced Sugar Content:** This recipe swaps out the high-sugar binders found in commercial granolas for natural alternatives like pure maple syrup. This allows you to enjoy a naturally sweet treat without the sugar crash.
  • **Nutrient-Rich Components:** By using natural peanut butter, coconut oil, and rolled oats, you’re packing your granola with healthy fats, fiber, and protein, making it a truly nutritious snack.
  • **Customization:** Homemade granola is endlessly adaptable! You can easily adjust the mix-ins to suit your taste, whether you prefer different nuts, dried fruits, or spices.
  • **Freshness and Flavor:** Nothing beats the aroma and taste of freshly baked granola. The deep, toasty flavors are unparalleled, and it just feels more special to enjoy something you’ve created yourself.

How to Make This Healthy Peanut Butter Granola

The beauty of this recipe lies in its simplicity and the use of wholesome, natural ingredients to bind everything together. Instead of relying on highly processed sugars, we use a trio of fantastic ingredients:

  • **Natural Peanut Butter:** Opt for a peanut butter with minimal ingredients – ideally just peanuts and maybe a touch of salt. This provides a rich, creamy flavor and healthy fats.
  • **Coconut Oil:** This adds a wonderful subtle flavor and helps create that desirable crispy texture. It’s a great source of medium-chain triglycerides (MCTs).
  • **Pure Maple Syrup:** A natural sweetener that offers a unique depth of flavor and is a less processed alternative to white sugar. You could also experiment with honey if you prefer.

Our mix-ins are delightfully straightforward: quality dark chocolate chips, creamy peanut butter chips, and a generous amount of roasted peanuts to enhance that nutty flavor. That’s truly all it takes! You can pull this granola recipe together and have it baking in your oven in mere minutes.

For the perfect golden crunch, I bake this granola at a gentle heat of 325°F (160°C). It’s important to stir the granola every 15 minutes or so to ensure even toasting and prevent burning. This low-and-slow method yields a perfectly crispy result. When it comes to adding the chips, you have a couple of options: you can stir them in right after removing the granola from the oven for those irresistible, melty chocolate “clumps” (my personal favorite!), or you can wait until the granola has cooled down a bit to prevent them from melting completely, keeping their distinct shape. Either way, it’s absolutely delicious!

Creative Ways to Enjoy Your Peanut Butter Granola

Once you’ve made a batch of this delightful peanut butter granola, the possibilities for enjoying it are endless. While my absolute favorite way to indulge is simply by the handful (often as a late-night craving satisfies!), it’s incredibly versatile and elevates so many dishes.

  • **Breakfast Booster:** Sprinkle a generous amount over your morning oatmeal, whether it’s warm or overnight oats, for an added layer of texture and flavor. It’s also fantastic on top of a stack of pancakes or waffles.
  • **Yogurt Parfait Perfection:** Layer it with creamy vanilla or plain Greek yogurt and fresh berries for a quick, wholesome, and satisfying parfait. The contrasting textures and flavors are simply divine.
  • **Smoothie Bowl Topping:** Take your smoothie bowls to the next level by scattering some crunchy granola on top. It adds a lovely bite and a boost of flavor.
  • **Dessert Embellishment:** Use it as a crunchy topping for baked apples, fruit crumbles, or even a scoop of ice cream for a healthier twist on dessert.
  • **On-the-Go Snack:** Portion it into small bags for a convenient and energizing snack you can grab on your way out the door, perfect for work, school, or hiking.

I typically keep a secret stash of my favorite coco-chocolate pecan granola in the pantry, but this peanut butter rendition offers a fantastic change of pace, a delightful alternative to switch things up sometimes. And with a new season of late-night nursing sessions on the horizon, I can guarantee this granola will be a much-needed companion – nourishing snacks are absolutely essential for busy moms!

My friends, spring has truly arrived, bringing with it lighter evenings, the fresh promise of April, and even the occasional lingering patch of snow! We’ve made it through the colder months, and now it’s time to embrace the energy and vibrancy of spring with delicious, wholesome foods like this homemade granola.

Description

Homemade is always better! Try this easy and delicious healthy peanut butter granola recipe with all natural peanut butter, coconut oil and maple syrup. Perfect for breakfast, or an any-time snack!

Ingredients

Scale
  • 3 cups rolled oats
  • 1/2 cup roasted peanuts
  • 1/4 cup coconut oil
  • 1/3 cup natural peanut butter
  • 1/3 cup pure maple syrup
  • 1/4 cup dark chocolate chips
  • 1/4 cup peanut butter chips

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare a large rimmed baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.
  2. In a generously sized mixing bowl, combine the rolled oats and roasted peanuts, ensuring they are well mixed. In a separate, microwave-safe bowl, combine the coconut oil, natural peanut butter, and pure maple syrup. Heat this mixture in the microwave in 30-second increments, stirring after each, until the coconut oil is fully melted and the ingredients can be easily whisked into a smooth, cohesive liquid. Pour this warm, binding mixture evenly over the oats and peanuts. Using a large spoon or spatula, stir thoroughly until all the oats and peanuts are completely coated.
  3. Spread the coated oat mixture evenly in a single layer onto the prepared baking sheet. Place it in the preheated oven and bake for 30-35 minutes. To ensure even browning and crispiness, stir the granola every 15 minutes during the baking process.
  4. Once baked to a golden perfection, remove the granola from the oven. You have two options for adding the chocolate and peanut butter chips:
    • **For Melted Clumps:** Immediately add the dark chocolate chips and peanut butter chips to the warm granola and stir well. The residual heat will melt the chips, creating delicious, gooey chocolate and peanut butter “clumps” throughout the granola.
    • **For Intact Chips:** Alternatively, wait approximately 15 minutes, allowing the granola to cool slightly, before adding the chips. This will help them retain their shape and prevent excessive melting.

Leave the granola to cool completely on the baking sheet before transferring it to an airtight container for storage.

Your freshly made peanut butter granola will stay wonderfully fresh and crisp when stored in an airtight container at room temperature for 1-2 weeks.
