Finding Comfort in Flavor Amidst Chaos
Life has a funny way of throwing curveballs, doesn’t it? Just when you think you’ve settled into a comfortable rhythm, a cascade of unexpected events can turn your week upside down. This past week felt like a masterclass in chaos. From creative (yet permanent) Sharpie art adorning the walls – a painting project now looming large – to a brazen attempt to steal our truck in broad daylight, it’s been a whirlwind. And let’s not forget the unexpected red lip-chap makeover for our little one! These moments, while challenging, often highlight the universal need for simple joys and dependable comforts.
In times like these, the kitchen often becomes my sanctuary. The act of preparing a nourishing, delicious meal brings a sense of normalcy and control back into a hectic schedule. It’s a reliable source of warmth and happiness for the whole family. That’s precisely why I’m so excited to share today’s recipe: these incredible Instant Pot Lemon Garlic Chicken Thighs. They are not just easy and quick; they’re a burst of flavor that promises to make any day better. This dish is my little act of perseverance, a promise to keep bringing you culinary delights even when the world feels a bit crazy.

What Makes Instant Pot Lemon Garlic Chicken Thighs So Special?
At its heart, this is an Instant Pot chicken recipe that transforms humble chicken thighs into a gourmet-level meal with minimal effort. Imagine tender, juicy chicken thighs, incredibly moist and infused with vibrant flavors, all bathed in a luscious, creamy, garlicky, and distinctly lemony sauce. It’s a symphony of tastes that awakens the palate and satisfies the soul.
What sets this dish apart is its incredible versatility and adaptability. While I personally favor bone-in, skin-on chicken thighs for their rich flavor and crispy potential, this recipe works beautifully with boneless and skinless options too, catering to your preference and dietary needs. The magic of the Instant Pot ensures the chicken remains succulent, locking in all the juices and flavors that might otherwise escape in conventional cooking methods.
Beyond its deliciousness, this recipe is a fantastic choice for those following specific dietary paths. It’s naturally keto-friendly and low-carb, making it a guilt-free indulgence that doesn’t compromise on taste. The creamy sauce, without any heavy starches (unless you choose to thicken with cornstarch), keeps the carb count low, while the chicken thighs provide excellent protein and healthy fats.
Essential Ingredients for a Flavorful Journey
You’ll be delighted by how few ingredients are needed to create such a profound depth of flavor. Each component plays a crucial role in building the dish’s distinctive profile:
- Chicken Thighs: The star of the show. Whether bone-in, skin-on for maximum flavor and juiciness, or boneless, skinless for quicker prep and leaner protein, they provide a hearty base. Their rich fat content prevents them from drying out in the pressure cooker.
- Garlic Powder, Salt, and Pepper: The foundational seasonings that enhance the chicken’s natural taste and create a savory crust when seared.
- Unsalted Butter: Adds richness and helps create that irresistible, velvety sauce. It also aids in browning the chicken beautifully.
- Fresh Garlic (3 cloves): The backbone of the sauce’s aromatic profile. Freshly minced garlic provides a pungent, warm flavor that is far superior to pre-minced versions.
- Lemons (juice and zest): This is where the magic happens! Lemon juice provides a bright, tangy acidity that cuts through the richness of the chicken and butter, while the zest (from the outer peel) contains essential oils that deliver a concentrated, fragrant lemon punch. Using both ensures a multi-layered lemon flavor.
- Chicken Broth: The liquid base for the sauce, providing moisture and a savory depth. Low-sodium broth allows you to control the overall saltiness of the dish.
- Cornstarch and Water (optional, for thickening): A simple slurry to achieve a thicker, more luxurious sauce consistency if desired. For a keto-friendly alternative, a touch of cream cheese or heavy cream can be stirred in at the end.
This carefully curated list of ingredients ensures a balanced, flavorful, and incredibly satisfying meal every time.

Mastering the Art of Instant Pot Lemon Garlic Chicken Thighs
Creating this dish in your Instant Pot is surprisingly straightforward, yielding impressive results with minimal fuss. The process harnesses the power of pressure cooking to infuse maximum flavor and ensure perfectly tender chicken.
Step-by-Step Perfection:
- Prepare the Chicken for Maximum Flavor: Begin by patting your chicken thighs thoroughly dry with paper towels. This crucial step helps achieve a beautiful sear and crispy skin, if applicable. In a small bowl, combine the zest of half a lemon (this is key for an intense lemon flavor!), garlic powder, salt, and freshly ground black pepper. Generously rub this aromatic seasoning mix all over the chicken thighs, especially under the skin if using skin-on pieces. Let them sit for a few minutes while you prepare the Instant Pot.
- Searing for Depth of Flavor: Activate the “Sauté” function on your Instant Pot and add a tablespoon or two of olive oil. Allow it to heat until shimmering. Carefully place the seasoned chicken thighs, skin-side down (or meaty side down for boneless), into the hot pot. Do not overcrowd; if necessary, sear in batches. Brown the chicken for 2-3 minutes per side, until a golden-brown crust forms. This searing step is vital as it builds deep, complex flavors through the Maillard reaction. Once browned, remove the chicken to a clean plate.
- Deglazing and Building the Sauce: With the chicken removed, you’ll notice delicious browned bits (fond) stuck to the bottom of the pot. These are flavor gold! Add the unsalted butter to the Instant Pot and let it melt. Stir in the minced fresh garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Pour in the fresh lemon juice and chicken broth. Immediately use a wooden spoon or spatula to scrape up all the browned bits from the bottom of the pot. This deglazing step not only incorporates incredible flavor into your sauce but also prevents a “Burn” error during pressure cooking. Stir in the remaining lemon zest.
- Pressure Cooking to Perfection: Return the seared chicken thighs to the Instant Pot, nestling them into the liquid. Ensure the chicken is not fully submerged but sitting comfortably. Secure the lid on your Instant Pot and make sure the sealing valve is set to the “Sealing” position. Select the “Pressure Cook” (or “Manual”) setting on High Pressure. For boneless, skinless chicken thighs, cook for 6 minutes. If you’re using bone-in, skin-on chicken thighs, increase the cooking time to 7 minutes to ensure they are cooked through. The Instant Pot will take approximately 10-15 minutes to come to pressure before the cooking countdown begins.
- Releasing Pressure and Thickening the Sauce: Once the cooking cycle is complete, allow the Instant Pot to naturally release pressure for 2 minutes. This brief natural release helps keep the chicken incredibly tender and juicy. After 2 minutes, carefully perform a quick release by turning the valve to the “Venting” position, allowing the remaining steam to escape. Once the float valve drops, you can safely open the lid.
- Finishing Touches and Serving: At this point, your chicken is ready to serve! However, if you prefer a thicker, more luxurious sauce (which I highly recommend!), remove the chicken to a serving platter. Turn the Instant Pot back to the “Sauté” setting. In a small bowl, whisk together 1 teaspoon of cornstarch with 2 teaspoons of cold water to create a smooth slurry. Slowly whisk this into the simmering sauce in the Instant Pot, stirring constantly until the sauce thickens to your desired consistency. This usually takes only a minute or two. Spoon this delectable lemon garlic sauce generously over the chicken.
Plate the chicken and sauce over a bed of fluffy rice, quinoa, or your favorite roasted vegetables. The rich, tangy, and savory flavors of this dish make it an instant crowd-pleaser and a truly satisfying meal.

Description
You only need a few ingredients to make these succulent Instant Pot lemon garlic chicken thighs! It’ll be your new favorite Instant Pot chicken recipe.
Ingredients
- 6–7 chicken thighs*
- 1 lemon, juice and zest (divided)
- 1 tsp garlic powder
- pinch of salt and pepper
- 2 tbsp olive oil
- 1/4 cup unsalted butter
- 3 cloves garlic, minced
- 1/3 cup low-sodium chicken broth
- optional: 1 tsp cornstarch (+2 tsp water)
Instructions
- Pat the chicken thighs dry with a paper towel, and combine together the zest of 1/2 the lemon, the garlic powder, salt and pepper. Rub the seasonings into the skin of the chicken thighs.
- Turn the Instant Pot to sauté and add the olive oil. Allow it to heat up for a few minutes, then add the chicken, skin (meaty) side down and cook for 2-3 minutes, or until browned. Use tongs to remove the thighs to a plate.
- Add the butter and allow it to melt, then add the minced garlic, followed by the lemon juice and chicken broth. Use a wooden spoon to scrape up the bits that might be stuck to the bottom of the pot. Turn the Instant Pot off, and add the chicken thighs back into the pot. Close the lid of the Instant Pot, being sure the valve is turned to sealed. Cook the thighs on high pressure for 6 minutes (7 for bone-in). The Instant Pot will take 10 minutes or so to come to pressure before starting the countdown. Once the timer beeps, allow the Instant Pot to release pressure naturally for 2 minutes before performing a quick release for the remainder of the steam.
- Remove the lid, and either serve immediately, or turn the Instant Pot to saute and stir in the cornstarch slurry, stirring to allow the sauce to thicken up. Serve over rice, vegetables or just on their own!
Leftover chicken and sauce can be kept in an airtight container, in the fridge, for 3-4 days.
Notes
*You can use boneless, skinless or bone-in, skin-on. If using bone-in, increase cooking time to 7 minutes.
