Summer is a season of light, fresh meals, and there’s nothing quite like the irresistible aroma of food sizzling on the grill. While my little Oscar might prefer a classic spaghetti and meatballs for his 7th birthday today (happy birthday, my sweet boy!), his enthusiasm for these grilled turkey thighs when I last made them was undeniable. Watching him devour them with such joy truly sealed their spot as a family favorite, proving that even the pickiest eaters can be won over by exceptional flavor.

Oscar is a truly wonderful kid – thoughtful, generous, and with a fantastic sense of humor. It’s hard to believe seven years have flown by since the day he was born; it feels like just yesterday. And while his birthday might call for pasta, for everyday meals that truly shine, these turkey thighs are a go-to. They are a testament to how simple ingredients, when combined thoughtfully, can create something truly extraordinary. This dish combines the succulence of perfectly grilled turkey with the bright, herbaceous kick of homemade chimichurri, making it an absolute must-try for your summer cooking repertoire.

Why Turkey Thighs Are Perfect for Grilling

Often overshadowed by chicken, turkey thighs are a fantastic choice for grilling, offering a rich, savory flavor and a wonderfully tender texture. They are more forgiving than breast meat, staying juicy and moist even when cooked on high heat, thanks to their slightly higher fat content. This makes them ideal for absorbing marinades and achieving that perfect charred exterior without drying out. Plus, turkey thighs are an excellent source of lean protein, making this meal not only delicious but also a healthy option for your family. Their versatility allows them to pair beautifully with a wide array of flavors, from smoky barbecue rubs to the fresh zest of chimichurri. They cook relatively quickly and evenly on the grill, providing a satisfying meal that’s both economical and incredibly flavorful.

The Magic of Chimichurri Sauce

Let’s talk about chimichurri, a sauce that has truly captured my heart (and palate) after a brief, pregnancy-induced hiatus. I first experimented with it for a roasted pork recipe in 2018, but severe morning sickness made even looking at the photos a challenge! Thankfully, those days are long gone, and my love for this vibrant condiment has been fully rekindled. Chimichurri is a versatile, uncooked sauce originating from Argentina and Uruguay, traditionally served with grilled meat (asado).

At its core, chimichurri is an explosion of fresh herbs, finely minced garlic, a touch of red wine vinegar for acidity, and olive oil to bring it all together. It’s incredibly aromatic, bright, and adds an unbeatable freshness to any dish. Think of it as a vibrant cousin to pesto, but with a distinct South American flair. Beyond grilled meats, chimichurri can elevate roasted vegetables, fish, eggs, or even be swirled into soups. It’s also a fantastic way to utilize an abundance of herbs from your garden or farmer’s market, transforming them into a punchy, flavor-packed sauce that keeps beautifully in the fridge.

The beauty of chimichurri lies in its simplicity and the quality of its ingredients. Fresh parsley and cilantro form the base, providing a herbaceous counterpoint to the richness of grilled turkey. Minced garlic delivers a pungent kick, while red wine vinegar adds a crucial tang that cuts through the savory meat, balancing the flavors perfectly. A hint of red pepper flakes introduces a gentle warmth, making each bite an exciting experience. This sauce isn’t just an accompaniment; it’s a star player that brightens and transforms the entire meal, making those juicy, marinated turkey thighs truly sing.

Crafting the Perfect Grilled Turkey Thighs with Chimichurri

This recipe is designed for maximum flavor with minimal effort, making it ideal for a delicious weeknight dinner or a relaxed weekend gathering. The key to truly spectacular grilled turkey thighs is a flavorful marinade, which not only tenderizes the meat but infuses it with incredible depth. You’ll want to start this dish at least 4 hours in advance, allowing the turkey thighs ample time to soak up all the wonderful essences of the herb and lemon marinade. For an even more intense flavor, consider preparing the marinade the night before and letting the turkey marinate overnight.

The Irresistible Turkey Marinade

The marinade for these turkey thighs is a symphony of fresh and dried herbs, citrus, and aromatic garlic. For this flavor-packed bath, you will need:

  • Olive oil: The base of our marinade, helping to carry flavors and keep the turkey moist.
  • Fresh lemon: Adds a bright, acidic note that tenderizes the meat and enhances its natural flavor.
  • Fresh basil and parsley: Two classic herbs that contribute vibrant, aromatic freshness.
  • Dried rosemary and thyme: These woody herbs offer a deeper, earthy undertone that complements turkey beautifully.
  • Minced garlic: Essential for its pungent, savory kick that permeates the meat.

Combining these ingredients creates a marinade that penetrates deep into the turkey, ensuring every bite is bursting with flavor. I find that marinating the meat in a large, resealable freezer bag, laid flat on a plate in the fridge, allows for maximum surface area coverage, guaranteeing every inch of the turkey soaks up the goodness.

Preparing the Vibrant Chimichurri Sauce

While your turkey thighs are marinating, or about an hour before you plan to grill, you can whip up the chimichurri sauce. While it can be made a day in advance, I believe its unparalleled freshness is best enjoyed shortly after preparation. The process is incredibly simple:

In a food processor or blender, combine fresh parsley, fresh cilantro, garlic cloves, good quality olive oil, and red wine vinegar. Pulse the ingredients until a vibrant green sauce forms, achieving your desired level of smoothness. Some prefer a chunkier texture for more bite, while others might lean towards a smoother consistency. A pinch of crushed red pepper flakes can be added here for a subtle heat that awakens the palate.

Grilling the Turkey Thighs to Perfection

When you’re ready to get dinner rolling, preheat your grill to a steady 375 F (about medium heat). Remove the marinated turkey thighs from the bag, shaking off any excess marinade. Place them directly on the preheated grill grates, allowing them to cook for approximately 20-25 minutes. The exact cooking time may vary depending on the thickness of your turkey thighs and the heat of your grill, so always rely on an instant-read meat thermometer to ensure doneness. The internal temperature should reach 165 F for safe consumption. This will ensure your turkey is cooked through, incredibly tender, and wonderfully juicy.

Once cooked, remove the turkey thighs from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful experience. Finally, serve these magnificent grilled turkey thighs generously topped with your freshly made chimichurri sauce. The combination of smoky, tender turkey and the bright, zesty sauce is truly a match made in culinary heaven.

What to Serve with Grilled Turkey Thighs and Chimichurri

The beauty of these grilled turkey thighs with chimichurri is their versatility when it comes to side dishes. The chimichurri itself is such a star, boasting bold flavors that it can elevate almost any accompaniment. We enjoyed ours with simple roasted baby potatoes, allowing their earthy sweetness to complement the vibrant sauce. However, the possibilities are endless for creating a well-rounded and delightful meal:

  • Grains: Fluffy white rice, hearty brown rice, or a light and airy cauliflower rice are excellent choices for soaking up every last drop of the flavorful chimichurri. Quinoa or couscous would also provide a wonderful texture and nutritional boost.
  • Potatoes: Beyond roasted baby potatoes, creamy mashed potatoes, crispy grilled potato wedges, or even a vibrant potato salad (especially one with a vinaigrette dressing) would be fantastic.
  • Vegetables: A simple side salad with a light vinaigrette is always a refreshing option. Grilled asparagus, green beans almandine, corn on the cob, or a medley of seasonal roasted vegetables (zucchini, bell peppers, cherry tomatoes) would also pair beautifully, echoing the grilled theme.
  • Bread: Crusty bread or warm pita bread is perfect for scooping up any leftover chimichurri.

No matter your choice, this meal is bound to be a crowd-pleaser, delivering a burst of freshness and robust flavor that everyone will enjoy. Bon appétit!

Description

Fresh, vibrant herbs combined with succulent grilled turkey thighs create the ultimate summer meal! Follow this simple recipe to make these incredibly flavorful grilled turkey thighs with homemade chimichurri sauce for an easy, delicious, and healthy weeknight dinner that the whole family will love.

Ingredients

Scale

For the Turkey Marinade:

  • 4 bone-in turkey thighs
  • 1/4 cup olive oil
  • 1 large lemon, juiced
  • 1/3 cup fresh basil, finely chopped
  • 1/3 cup fresh parsley, finely chopped
  • 1 tbsp dried rosemary
  • 1/2 tsp dried thyme
  • 3 cloves garlic, minced

For the Chimichurri Sauce:

  • 1 1/2 cup fresh parsley, packed
  • 1/2 cup fresh cilantro, packed
  • 3 garlic cloves, peeled
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp crushed red pepper flakes (optional, for a hint of heat)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Turkey Marinade: Begin by placing the turkey thighs in a large, sturdy resealable freezer bag. In a separate medium bowl, whisk together the olive oil, freshly squeezed juice from the large lemon, chopped fresh basil, chopped fresh parsley, dried rosemary, dried thyme, and minced garlic cloves until well combined. Pour this aromatic mixture evenly over the raw turkey thighs in the bag. Seal the bag, pressing out as much air as possible, and ensure the marinade fully coats the turkey by gently massaging the bag. Transfer the bag to the refrigerator and allow the turkey to marinate for a minimum of 4-6 hours, or ideally, overnight for the most profound flavor infusion. This step is crucial for tenderizing the meat and imparting a rich, herbaceous taste.
  2. Grill the Turkey Thighs: Approximately 30 minutes before you are ready to grill, remove the marinated turkey thighs from the refrigerator to allow them to come closer to room temperature. This promotes more even cooking. Preheat your grill to a medium-high heat, aiming for an internal temperature of 375°F. Once the grill is hot, carefully remove the turkey thighs from the marinade, shaking off any excess. Discard the remaining marinade. Place the turkey thighs directly on the preheated grill grates. Cook for 25-30 minutes, flipping them occasionally, until a meat thermometer inserted into the thickest part of the thigh (avoiding the bone) registers a safe internal temperature of 165°F (74°C). The turkey should have a beautiful char and be golden brown.
  3. Make the Chimichurri Sauce: While the turkey is grilling, prepare your fresh chimichurri sauce. In the bowl of a food processor or a high-speed blender, combine all the chimichurri sauce ingredients: fresh parsley, fresh cilantro, peeled garlic cloves, olive oil, red wine vinegar, and crushed red pepper flakes (if using). Pulse the mixture until it is nearly smooth but still retains a slight bit of texture. You want it vibrant and fresh, not a paste. Taste and adjust seasoning with salt and freshly ground black pepper as needed.
  4. Serve and Enjoy: Once the grilled turkey thighs are cooked to perfection, remove them from the grill and let them rest on a cutting board for 5-10 minutes. This resting period is vital as it allows the juices to redistribute throughout the meat, ensuring maximum tenderness and juiciness. Serve the warm grilled turkey thighs generously topped with spoonfuls of the vibrant chimichurri sauce. Pair immediately with your favorite side dishes and prepare to savor a truly unforgettable summer meal!

Notes

If you choose to use boneless turkey thighs for this recipe, please adjust the grilling time. Boneless thighs will cook faster, typically requiring only 15-20 minutes on the grill. Always use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C) for food safety.
