  6. Remove the chicken from the marinade, reserving all the marinade liquid. Pat each chicken piece thoroughly dry with paper towels again. Add the remaining oil to the Instant Pot. Working in 2 batches if necessary, sear the chicken on all sides until deeply browned and crispy. Remove the browned chicken and set it aside on a clean plate.
  7. Pour the reserved wine marinade and the chicken stock into the Instant Pot. Immediately use a wooden spoon to scrape up all the delicious browned bits (fond) from the bottom and sides of the pot, stirring them into the liquid. Bring to a boil using the “Sauté” function and cook for about 5 minutes to reduce the liquid by approximately half.
  8. Once the braising liquid has reduced, carefully return the browned chicken, the marinated onions, fresh thyme sprigs, sautéed mushrooms, carrots, and crispy bacon bits to the Instant Pot.
  9. Secure the lid in place, ensure the sealing valve is set to “Sealing,” and set the Instant Pot to “Pressure Cook” (or “Manual”) on Medium High for 15 minutes.
