- 1 can beer (or additional cup of beef stock for an alcohol-free version)
- 1 12oz jar pepperoncini peppers, with half the juice reserved
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 tbsp dried oregano
- 1 1/2 tsp sugar (balances the tang)
- 1/2 tsp black pepper
- 1/2 tsp dried basil
- 1 1/2 tsp dried parsley flakes
- 1 tsp salt
- 1 small yellow onion, diced
- 3–4 lb beef chuck roast (well-marbled is best)
- Pepper jack cheese or provolone, sliced, for serving
- Hoagie rolls or crusty Italian bread, for serving
Instructions
- To your slow cooker, add the beef stock, beer (or additional stock if preferred), and half the juice from the jar of pepperoncini.
