- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 cup tapioca flour/starch
Strawberry Cream Cheese Filling
- 2 cups fresh strawberries, diced
- 8 oz cream cheese, room temperature*
- 2 tbsp honey
Instructions
- Prepare the crepe batter. In a large mixing bowl, whisk the eggs vigorously for about a minute until they become lightly frothy. Incorporate the milk and vanilla and almond extracts, whisking until fully combined. Gradually add the tapioca flour, a little at a time, stirring continuously with a large spoon until the mixture is smooth and free of any large lumps. For best results, refrigerate the batter for approximately 30 minutes to allow it to rest and thicken slightly*.
- Heat an 8-inch to 9-inch non-stick skillet over medium heat on your stovetop. Generously spray the skillet with non-stick cooking spray, or add a small pat of butter or a teaspoon of oil, ensuring the entire surface is coated. Working quickly, pour about 1/4 cup of batter into the center of the hot skillet. Immediately lift the pan from the heat and swirl it gently with your wrist to evenly coat the entire bottom surface with a thin layer of batter. Return the skillet to the stove and cook for about 30 seconds to one minute, or until the edges begin to turn golden brown and lift slightly. Carefully grab the edge of the crepe with your fingertips or a thin spatula and swiftly flip it over, cooking the other side for an additional 20-30 seconds. Transfer the cooked crepe to a plate to cool. Continue this process with the remaining batter, stacking the finished crepes.
- Prepare the filling. Place the room-temperature cream cheese into a food processor and pulse a few times until it’s smooth and creamy. Add the fresh, diced strawberries and honey, then pulse for about a minute until the mixture is completely smooth and well combined. Taste the filling and adjust sweetness by adding more honey, or add more strawberries for a fruitier flavor, if desired.
- To serve, spoon a generous tablespoon of the strawberry cream cheese filling onto each crepe, and for an added burst of freshness, top with a few extra fresh berries. Fold the crepes, either in half or into quarters, and serve immediately.
Storage Tips: Leftover crepes can be tightly wrapped in plastic wrap and stored in the refrigerator for 1-2 days, or frozen for 2-3 weeks. Store any remaining strawberry cream cheese filling in an airtight container in the fridge for 2-3 days.
