Unveiling the Magic of Mexican Street Corn (Elote)

Mexican street corn, affectionately known as “elote,” is a beloved culinary staple found on bustling street corners and at vibrant fiestas across Mexico. This iconic snack is a symphony of flavors and textures, traditionally prepared by grilling fresh corn on the cob until it develops a beautiful char and smoky sweetness. But the magic truly begins with its generous coating: a delectable mixture of creamy mayonnaise, tangy sour cream, crumbly cotija cheese, a sprinkle of fiery chili powder, a squeeze of fresh lime juice, and a flourish of aromatic cilantro.

Each ingredient plays a crucial role in creating the distinctive elote experience. The grilling process caramelizes the natural sugars in the corn, enhancing its flavor profile with a smoky depth. The mayonnaise and sour cream provide a rich, cooling base that perfectly complements the corn’s sweetness and the spice. Cotija cheese, a firm, salty Mexican cheese, adds a wonderful savory element and a delightful texture. Chili powder introduces a warm, earthy heat, while fresh lime juice cuts through the richness with its bright acidity, and cilantro infuses the dish with a burst of herbaceous freshness. Together, these components create a harmony that is utterly irresistible.

If you’re new to cotija cheese or find it difficult to source at your local grocery store, don’t fret! A fantastic and readily available substitute is crumbled feta cheese. Its salty, tangy profile closely mimics cotija, ensuring your salad still captures that authentic Mexican essence.

From Cob to Bowl: Crafting the Ultimate Mexican Street Corn Pasta Salad

The inspiration behind this incredible pasta salad was simple yet brilliant: take all the phenomenal flavors of traditional elote and transform them into a versatile, hearty, and utterly addictive salad. We’ve essentially distilled the essence of that beloved street food, adding a modern twist with a touch of sriracha, to create a dressing that coats every component of this unique pasta dish.

To embark on this culinary adventure, you’ll first need your choice of cooked pasta. We recommend shapes like fusilli or elbow macaroni, as their crevices are perfect for catching and holding onto that luscious dressing. Once cooked al dente, ensure your pasta is thoroughly rinsed and dried to prevent it from becoming sticky. This step is crucial for achieving the perfect salad texture.

Next comes the star of the show: the grilled corn. After grilling to perfection and allowing it to cool slightly, carefully slice the kernels off the cob. This sweet, smoky corn forms the foundation of our salad. To this, we add a generous amount of crumbled cotija (or its delightful stand-in, feta cheese), creamy diced avocado for richness, fresh cilantro for a pop of herbaceous flavor, and vibrant diced bell pepper for color and a touch of sweetness.

For those who, like us, appreciate a good kick, we’ve also incorporated finely diced jalapeno. This pepper adds a fantastic layer of heat and a fresh, peppery bite that truly elevates the salad’s Mexican-inspired profile.

Tailoring the Heat: Customizing Your Pasta Salad’s Spice Level

We understand that not everyone shares the same love for fiery flavors. If you have little ones (or even grown-ups!) who might exclaim “SPICY!!!” at the mere hint of heat, rest assured that this recipe is easily adaptable. You can absolutely omit the diced jalapeno entirely. For the sriracha in the dressing, consider reducing it to just 1 teaspoon or even ½ teaspoon. While we wouldn’t recommend skipping the sriracha completely, as it contributes a fantastic depth of flavor and a subtle tang that enhances the dressing, you can certainly dial it back to suit milder palates.

However, if you’re truly aiming for an authentic Mexican-inspired experience, we highly encourage you to embrace all the vibrant spices! The combination of sriracha and jalapeno doesn’t just add heat; it introduces a complex flavor profile that is both exhilarating and incredibly satisfying. These ingredients are key to achieving the distinctive character of elote, making the salad truly sing with a balance of creamy, tangy, and spicy notes.

In fact, it’s so satisfying and complete on its own that it frequently becomes a standalone meal in our household.

Mastering the Grill: Tips for Perfect Corn on the Cob

Grilling corn on the cob is simpler than it seems and adds an irreplaceable smoky depth to this salad. If the idea of grilling intimidates you, remember that practice makes perfect! Here are a few quick tips:

  • Prep is Key: Remove the husks and silks from your corn. Brush the cobs lightly with olive oil or butter and season with salt and pepper.
  • Medium-High Heat: Preheat your grill to a medium-high temperature (around 375-400°F).
  • Rotate Frequently: Place the corn directly on the grill grates. Cook for about 8-12 minutes, turning every 2-3 minutes, until kernels are tender-crisp and lightly charred on all sides. Don’t be afraid of a little char – that’s where the flavor is!
  • Alternative Methods: If grilling isn’t an option, you can roast corn in the oven at 400°F for 15-20 minutes, or even boil it for 5-7 minutes until tender, then sauté briefly in a hot pan with a little oil to get some browning.

Description

Spicy sriracha sauce and jalapeno give this Mexican street corn pasta salad the perfect amount of kick! If you love Mexican street corn on the cob, you’ll definitely love this unique pasta salad recipe!

Ingredients

Salad

  • 2 tbsp olive oil, divided
  • 4–5 cobs of corn
  • 1 1/2 cups uncooked pasta (fusilli, elbow, etc)
  • 2 garlic cloves, minced
  • 1 jalapeno, minced
  • 1 red pepper, diced
  • 3 green onions, diced
  • 1/3 cup cotija cheese* (crumbled)
  • 1/3 cup cilantro, diced
  • 1 avocado, diced**

Dressing

  • 1/4 cup Greek yogurt, full-fat
  • juice of 1 lime
  • 1 tbsp honey
  • 2 tsp sriracha
  • 1/2 tsp ground cumin
  • salt and pepper, to taste

Instructions

  1. Preheat the grill to about 350F and rub 1 tbsp of olive oil over the cobs of corn. Grill the corn for about 10 minutes, rotating it every 2-3 minutes until lightly charred. Remove the corn from the grill and allow it to cool. Once cooled, use a knife to slice the corn off the cob, placing it into a large salad bowl.
  2. While the corn is cooking, bring a medium-sized pot of water to a boil. Once boiling, add the uncooked pasta and cook until al dente, about 8 minutes. Drain the water, and spread out the noodles on a baking sheet lined with paper towels. Allow the noodles to dry off completely!
  3. Heat the remaining olive oil in a small pan over medium heat. Once the oil is hot, add the minced garlic and diced jalapeno, sautéing for about 5 minutes, until fragrant. Remove from heat.
  4. Add the cool/dry pasta, the sautéed garlic and jalapeno mixture, diced red pepper, diced green onions, crumbled cotija, and fresh cilantro to the large salad bowl with the corn.
  5. Make the dressing: In a measuring cup or small bowl, whisk together the Greek yogurt, lime juice, honey, sriracha, ground cumin, and salt and pepper until thoroughly combined and smooth. Taste and adjust seasonings as necessary. Pour the dressing all over the salad and toss gently to combine all ingredients evenly.
  6. Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld beautifully. You can make it up to 1 day in advance. Add the diced avocado just before serving to ensure it stays fresh and vibrant, preventing any browning.

Keep any leftover salad in the fridge, covered tightly, for 2-3 days.

Notes

  • *If you can’t find cotija cheese, crumbled feta cheese makes an excellent substitute due to its similar salty and tangy profile.
  • **I prefer to add the diced avocado right before serving to prevent it from browning in the salad. However, if the slight discoloration doesn’t bother you, feel free to add it at the same time as the cilantro!
