Delicious Dark Chocolate Mini Peanut Butter Cups, a perfect keto-friendly dessert
Decadent and healthy, these mini peanut butter cups are a treat you can feel good about.

After much anticipation, I am absolutely thrilled to finally share this homemade peanut butter cups recipe with you! While the internet abounds with various versions of peanut butter cups, I firmly believe that my rendition stands out for several compelling reasons, making it truly special:

  • Completely Sugar-Free: There is absolutely NO added sugar in this recipe, not even un-refined alternatives. We rely on the natural sweetness and richness of high-quality ingredients.
  • Intensely Dark Chocolate: We’re talking seriously dark chocolate here, providing a profound, robust flavor that pairs perfectly with the creamy peanut butter.
  • Diet-Friendly: These cups are naturally gluten-free and incredibly low-carb, making them ideal for those following ketogenic or other low-carbohydrate diets.
  • Irresistibly Mini: Everything is better in miniature, and these bite-sized delights are no exception! Their small size makes them perfect for portion control and guilt-free snacking.

Demystifying “Sugar-Free”: Understanding the Sweetness in These Mini Peanut Butter Cups

In the spirit of complete transparency and to provide accurate nutritional information, it’s important to clarify the “sugar-free” claim. While this recipe contains no added sugars, the 90% dark chocolate itself naturally contains a minimal amount of sugar. For instance, a 30-gram serving of high-quality 90% dark chocolate typically has only about 2 grams of sugar. This minor presence contributes to the overall sweetness without requiring any additional sweeteners.

I’ve diligently performed the calculations (yes, mathematics proves incredibly useful in the real world!), and the entire batch of this recipe contains approximately 18 grams of total carbohydrates. When divided among the mini peanut butter cups, this translates to less than 1 net carb per individual cup! This impressive macro profile makes them an outstanding choice for anyone adhering to a keto or low-carb lifestyle, allowing you to enjoy a decadent treat without compromising your dietary goals.

Each bite offers a perfect balance of intense dark chocolate and creamy peanut butter.

I must confess, I’ve been making these delightful treats so frequently that I probably should consider taking a short break. Probably. Which, of course, means I most likely won’t—at least not for the foreseeable future! I keep telling myself I’ll stop when I eventually get tired of them, but I’m quite convinced that day will never come. These mini peanut butter cups are genuinely addictive in the best possible way. Just a fair warning: once you start, it’s incredibly hard to stop!

Just last night, you might have found me on my hands and knees, peering under the refrigerator, determinedly trying to fish out a rogue cup that had rolled away. There was no way I was letting that little treasure escape! That’s how good they are. Seriously, you absolutely have to try them for yourself.

Ingredient Spotlight: The Importance of 90% Dark Chocolate and Natural Peanut Butter

When it comes to crafting these perfect low-carb peanut butter cups, the quality and type of your ingredients truly make a difference. Let’s delve into a couple of key components:

Choosing Your Dark Chocolate: The 90% Difference

I exclusively use Lindt 90% chocolate for this recipe, and for good reason. I’ve experimented with various other brands, but many proved to be too bitter for my palate. Lindt strikes a beautiful balance, offering the deep, intense flavor of dark chocolate without an overwhelming bitterness that might deter some. Please note, this is my personal preference and not a paid endorsement! You are absolutely free to use any brand of 90% dark chocolate that you prefer and enjoy.

While I highly recommend 90% dark chocolate for its minimal sugar content and bold flavor, you can certainly opt for a 70% or 80% bar if that’s what you have on hand or prefer a slightly sweeter profile. However, it’s crucial to remember that using a less-dark chocolate will increase the overall sugar and carbohydrate content of your finished peanut butter cups. Always check the nutritional label if you’re closely monitoring your macros.

The Purity of All-Natural Peanut Butter

Another non-negotiable ingredient in my recipe is all-natural peanut butter. By “all-natural,” I mean peanut butter that contains just one or two ingredients: peanuts, and perhaps a touch of salt. It should be free from added sugars, hydrogenated oils, and other fillers commonly found in more processed varieties.

While using a processed, sugary peanut butter would undoubtedly result in a delicious treat (who doesn’t love the classic combo?), it would significantly alter the nutritional profile of these cups. The primary goal of this recipe is to keep them low in sugar and carbs, and processed peanut butter would counteract that. Sticking to natural peanut butter ensures that your healthy peanut butter cups remain truly healthy and keto-friendly.

Crafting Perfection: A Step-by-Step Guide to Making Your Mini Peanut Butter Cups

The beauty of this recipe lies not only in its minimal ingredients but also in its incredible simplicity. You don’t need to be a gourmet chef to whip up a batch of these delectable treats. Here’s how to create your own dark chocolate mini peanut butter cups, complete with tips for success:

Essential Equipment: The Mini Muffin Tin

Before you begin, ensure you have the right tools! A good quality mini muffin tin is essential for achieving the perfect bite-sized shape. I consistently rely on this particular mini muffin tin, which yields consistently excellent results.

You’ll also need mini cupcake liners to prevent sticking and make for easy handling. Paper liners work wonderfully, but silicone mini liners are also a great reusable option.

The Melting Process: Creating a Silky Chocolate Base

The first step involves melting your dark chocolate and coconut oil. You can do this using a microwave or a double boiler:

  1. Microwave Method: Place your chopped 90% dark chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly after each interval, until the mixture is completely melted and beautifully smooth. Be careful not to overheat the chocolate, as it can seize.
  2. Double Boiler Method: If you prefer a more controlled melting process, set a heatproof bowl over a pot of simmering water (ensure the water doesn’t touch the bottom of the bowl). Add the chopped chocolate and coconut oil, stirring gently until melted and smooth.

Once melted, whisk in the cocoa powder until the mixture is uniform and silky. This enhances the dark chocolate flavor and helps achieve a rich, consistent color.

Layering for Perfection: Chocolate, Peanut Butter, Chocolate

Now comes the fun part – assembling your cups!

  1. First Chocolate Layer: Pour approximately 1 teaspoon of the melted chocolate mixture into the bottom of each mini cupcake liner. This forms the solid base of your peanut butter cup.
  2. Quick Freeze: Transfer the muffin tin to the freezer for about 5 minutes. This brief freezing period allows the first chocolate layer to harden sufficiently, preventing the peanut butter from mixing into it.
  3. Peanut Butter Filling: Remove the tin from the freezer. Carefully dollop about 1/2 teaspoon of your all-natural peanut butter onto the center of each hardened chocolate disc. Use the back of a spoon to gently spread and smooth it out, leaving a small border for the final chocolate layer.
  4. Final Chocolate Layer: Distribute the remaining melted chocolate mixture evenly over the peanut butter layer in each cup, using about 1/2 teaspoon per cup. Ensure the peanut butter is fully covered.
  5. Second Freeze & Finishing Touch: Return the muffin tin to the freezer for another 10 minutes, or until the cups are completely solid. Once frozen, sprinkle a few flakes of sea salt on top of each peanut butter cup. The sea salt is optional but highly recommended, as it brilliantly enhances the chocolate and peanut butter flavors.

Just like that, your delectable, low-carb dark chocolate mini peanut butter cups are ready to enjoy! Can you believe they’re made with only 4 ingredients? That’s another major win in the category of effortless, healthy desserts!

Storage Tips for Optimal Freshness

For the best texture and to maintain their delightful firmness, these dark chocolate mini peanut butter cups should be stored in the freezer. Place them in an airtight container, and they will keep perfectly for 1 to 2 weeks. You can enjoy them straight from the freezer for a firm, satisfying bite.

While it’s possible to store them in the refrigerator, they will become significantly softer and may not retain their shape as well, especially if handled frequently. For the ultimate experience, the freezer is your best friend!

Description

Peanut butter and chocolate lovers, rejoice! With only 4 ingredients, no added sugar and less than 1 net carb per cup, you can have a ton of these mini peanut butter cups without too much guilt!

Ingredients

  • 3 oz 90% dark chocolate, chopped
  • 1/2 cup coconut oil
  • 1/4 cup cocoa powder
  • 1/4 cup all-natural peanut butter
  • Sea-salt flakes, for topping (optional)

Instructions

  1. Line a 24-count mini muffin tin with paper liners and set aside. In a microwave-safe bowl, add the chopped dark chocolate along with the coconut oil, and heat on high in 30 second increments, stirring in between, until melted and smooth. Whisk in the cocoa powder until smooth.
  2. Pour 1 tsp of the chocolate mixture into the bottom of each paper liner. Place in the freezer for about 5 minutes to harden up. Remove from the freezer, and place 1/2 tsp peanut butter on top of the chocolate bottoms. Smooth it out a bit with the back of a spoon. Divide the remaining melted chocolate mixture among the cups, on top of the peanut butter (about 1/2 tsp each). Freeze until solid again, about 10 minutes. Sprinkle some sea salt on the tops of the peanut butter cups once frozen. Enjoy from frozen!

Peanut butter cups will store best in the freezer, in an airtight container for 1-2 weeks. You can also store them in the fridge, but they’ll be much softer and may not hold their shape as well.

Notes

  1. 90% chocolate is fairly low carb; you may substitute the chocolate for a less-dark chocolate but the sugar and carb count will be higher.
