How To Make Creme Brulee

  6. Cool and chill: Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight, up to two days.
  7. Caramelize the top: When ready to serve, sprinkle about a teaspoon of granulated sugar evenly over each custard. Caramelize the sugar with a kitchen torch or place the ramekins briefly under a broiler until the sugar melts and turns deep amber. Let the tops cool slightly so the sugar hardens, then serve.
