Chocolate Cherry Chip Cupcakes - A Delicious Homemade Recipe

Summer is a season for relaxation, fresh produce, and, undeniably, a little indulgence. While my recipe posts might have been few this season, they’ve certainly been sweet – with cupcakes taking center stage! And why not? Sometimes, the sheer joy of baking and a little sugar is the perfect antidote to a busy schedule. Plus, being part of the vibrant #CupcakeMondays community provides endless inspiration and a wonderful excuse to channel my creative energy into these delightful, frosted treats.

Today, I’m thrilled to unveil my latest confection: Homemade Chocolate Cherry Chip Cupcakes! Believe me when I say these deserve every exclamation mark. For many of us, the boxed cherry chip cake holds a special place in our hearts, a staple at birthday parties and celebrations. It was a flavor I frequently requested growing up, and the thought of recreating that beloved taste from scratch, using real cherries for an authentic burst of flavor, has been a long-held dream. After numerous delicious experiments, I am incredibly confident that these cupcakes perfectly capture that nostalgic charm, but with a refined, homemade touch.

Fresh Cherries for Baking Chocolate Cherry Chip Cupcakes

The secret to these exceptional cupcakes lies in the quality of the ingredients, especially the star: fresh cherries. I was fortunate enough to use a bountiful harvest of cherries brought home from a recent family vacation to the picturesque Okanogan region. Stone fruit season is truly a treasure, and the Okanagan Valley, with its sun-drenched orchards, offers some of the finest. Beyond the fruit picking, our trip was a perfect escape; the weather was beautifully mild, allowing the boys ample beach time and Etienne and I a cherished lunch date at the stunning Mission Hill Winery – a rare and much-needed moment of tranquility. I also had the pleasure of visiting a gorgeous lavender farm, bringing back not just gifts, but also fragrant memories. This fresh, vibrant produce from such memorable experiences truly makes a difference in the final taste of these cupcakes, transforming them from a simple treat into a celebration of flavor and cherished moments.

Crafting the Perfect Cherry Chip Cupcake Base

Moving on to the heart of our creation – the cupcakes themselves! Achieving a cupcake that is not only flavorful but also incredibly soft, moist, and fluffy is paramount. My go-to secret ingredients for this texture are Greek yogurt and buttermilk. These dairy components work wonders, adding a delicate tang and unparalleled moisture that elevates the crumb to perfection. If you haven’t incorporated them into your baking yet, you’ll be amazed at the difference they make!

For these chocolate cherry chip cupcakes, you’ll need nearly a cup of fresh cherries, carefully pitted and diced. This step is crucial for distributing that wonderful cherry flavor throughout each bite. If you bake with fresh cherries often, investing in a good cherry pitter is a game-changer – it makes the preparation process quick and effortless. Once your batter is ready and studded with these beautiful cherries and mini chocolate chips, the cupcakes bake for approximately 18-22 minutes. A simple toothpick test, inserted into the center, will confirm they are perfectly baked when it comes out clean. Allow them to cool completely on a wire rack; patience here is key, as fully cooled cupcakes are essential for the next, arguably most delicious, stage: the buttercream frosting.

Two-toned Chocolate Cherry Chip Cupcake Frosting

Mastering the Fresh Cherry and Chocolate Buttercream Frosting

The frosting truly makes these cherry chip cupcakes sing. We’re going for an impressive two-toned swirl, combining a rich chocolate buttercream with a vibrant fresh cherry buttercream. Don’t be intimidated by the idea of dual frostings or piping; it’s easier than it looks! If piping isn’t your preference, you can certainly choose one of the flavors and double the quantity, or simply spoon both frostings onto the cupcakes for a charming half-and-half look. For those keen to try the swirled effect, combining two frostings in one piping bag creates a stunning visual and flavor experience. It’s a technique that adds a professional touch with minimal effort.

The fresh cherry frosting is, as the name suggests, made with real cherries, ensuring an authentic, bright fruit flavor. A critical step for this particular frosting is to finely dice the fresh cherries and then thoroughly drain them in a fine-mesh strainer, pressing down with the back of a spoon to release excess juice. This prevents the frosting from becoming too wet and ensures a stable, creamy consistency. Begin by beating softened unsalted butter until light and fluffy, then gradually incorporate powdered sugar. A hint of pure almond extract beautifully complements the cherry flavor. Finally, fold in the strained diced cherries. If the frosting seems a bit too stiff, you can add a small amount of the reserved fresh cherry juice, about a teaspoon at a time, until the desired texture is reached. It’s important to note: avoid using heavy cream in this specific cherry buttercream, as the acidity from the cherries can cause the cream to curdle, ruining the frosting’s smooth consistency. Once both buttercreams are prepared, get ready to frost these beauties and enjoy the artistic process!

Frosting these delectable cupcakes is the final, rewarding step. Whether you opt for the elegant two-toned swirl or a simpler application, the combination of rich chocolate and bright, fresh cherry is simply irresistible. Each bite offers a harmonious balance of sweet, fruity, and chocolatey goodness, evoking cherished childhood memories while offering a sophisticated, homemade twist. These cupcakes are perfect for any celebration, a comforting treat, or simply to brighten your day.

Description

Enjoy the best of both worlds with these chocolate cherry chip cupcakes! They’re just like the very cherry cupcakes you grew up with, but made with real cherries and chocolate chips!

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup granulated sugar
  • 1/2 cup neutral oil (grapeseed, vegetable, canola)
  • 1/2 cup plain Greek yogurt*
  • 1/2 cup buttermilk
  • 1 tsp pure vanilla extract
  • 1/2 tsp pure almond extract
  • 3/4 cup fresh cherries, pitted and diced
  • 1/2 cup mini chocolate chips

Chocolate Buttercream Frosting

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 1/2 cups icing sugar
  • 1/4 cup cocoa powder
  • 1–2 tbsp heavy cream or milk (as needed)
  • 1 tsp pure vanilla extract

Fresh Cherry Buttercream Frosting

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 1/2 cups icing sugar
  • 1/4 tsp pure almond extract
  • 1/2 cup fresh cherries, diced finely and strained*
  • 1 tsp fresh cherry juice (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two standard 12-cup muffin tins with cupcake liners. This recipe typically yields about 15-16 cupcakes.
  2. In a large mixing bowl, thoroughly sift together the all-purpose flour, baking soda, and salt. Sifting ensures a lighter texture and even distribution of leavening agents. Set this dry mixture aside.
  3. Using a stand mixer fitted with the paddle attachment, or a handheld electric mixer, beat the eggs on medium-high speed until they become light and frothy, typically for 1-2 minutes. Gradually add the granulated sugar and neutral oil, continuing to beat until the mixture is well combined and slightly thickened. Incorporate the plain Greek yogurt, buttermilk, pure vanilla extract, and pure almond extract. Mix slowly until all wet ingredients are just combined. Add half of the reserved flour mixture and mix on low speed until barely incorporated. Then, add the remaining half of the flour mixture, mixing only until no dry streaks remain. Be careful not to overmix, as this can lead to tough cupcakes. Finally, using a large wooden spoon or spatula, gently fold in the pitted and diced fresh cherries and mini chocolate chips until evenly distributed throughout the batter.
  4. Evenly divide the cupcake batter among the prepared liners, filling each about three-quarters full. Avoid overfilling to prevent spillage and ensure beautifully domed tops. Bake for approximately 18-22 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out clean. For even baking, consider rotating your muffin tins halfway through the baking time. Once baked, remove the cupcakes from the oven and let them cool in the tins for 5 minutes before transferring them to a wire rack to cool completely. Ensure they are fully cooled before proceeding with frosting.
  5. Prepare the Chocolate Buttercream Frosting. In the bowl of a stand mixer with the paddle attachment, or using a handheld electric mixer, beat the softened unsalted butter on medium-high speed until it is light and fluffy, about 2-3 minutes. Sift in the cocoa powder and icing sugar, then mix on low speed until the sugar and cocoa are fully incorporated. Add 1 tablespoon of heavy cream (or milk) and the pure vanilla extract. Increase the speed to high and beat for another 2-3 minutes until the frosting is smooth, creamy, and spreadable. If the frosting is too thick, add the second tablespoon of cream, one teaspoon at a time, until the desired consistency is achieved. Transfer this frosting to a piping bag if creating a two-toned effect, or set aside.
  6. Prepare the Fresh Cherry Buttercream Frosting. In a separate clean bowl, using a stand mixer with the paddle attachment or a handheld electric mixer, beat the softened unsalted butter until whipped and light. Gradually add the icing sugar and pure almond extract, mixing on low speed until incorporated. Add the finely diced and strained fresh cherries. Mix on low speed until thoroughly combined. If the frosting appears too thick, add 1 teaspoon of fresh cherry juice (from the strained cherries) at a time until the desired creamy consistency is reached. It is crucial to AVOID adding cream to this frosting, as the natural acidity in the cherries can cause the buttercream to curdle. Once both frostings are ready, frost the completely cooled cupcakes immediately.

Storage: Frosted cupcakes will keep well at room temperature on the counter for up to 2 days, stored in an airtight container. For longer freshness, I prefer to store mine in the refrigerator, where they will last for 4-5 days. If you wish to prepare ahead, unfrosted cupcakes can be frozen for up to 2 months. Thaw at room temperature before frosting and serving.

Notes

  1. For the best moisture and richness in your cupcakes, I recommend using full-fat Greek yogurt. However, a low-fat variety will also work well if that’s what you have on hand.
  2. After dicing your fresh cherries for the cherry buttercream, place them in a fine-mesh strainer set over a measuring cup. Gently press down on the cherries with the back of a spoon to extract their juices. This step is vital to prevent the frosting from becoming too thin. Reserve the collected cherry juice to add, if necessary, to the cherry buttercream for perfect consistency.
