These Crispy Baked Chicken Quesadillas are warm, crunchy tortillas filled with shredded chicken, fresh baby spinach and melted Mexican-style cheese. They’re an easy weeknight dinner that the whole family will love.

Quesadillas are a favorite in my house — my kids will happily eat them any time of day. Making them one at a time in a skillet can be slow, so I started baking a whole batch at once. This baked version keeps the tortillas crisp, hides vegetables in cheesy goodness, and is ready in about 30 minutes. It’s now one of our go-to weeknight dinners.
Why you’ll love this recipe
- Effortless: Baking many quesadillas at once solves the “one pan at a time” problem and speeds up dinner prep.
- Kid friendly: Cheese and chicken make a familiar base that lets you sneak in spinach and other veggies without complaint.
- Great for groups: They bake together and work well as easy finger food for last-minute guests or casual gatherings.

Ingredients
- Flour tortillas: 10-inch tortillas work well.
- Cooked shredded chicken: Rotisserie chicken keeps this quick — about 4 cups.
- Fresh baby spinach: Roughly 8 ounces, chopped if desired.
- Sour cream: About 1½ cups, with extra for serving.
- Seasoning: Cumin, garlic powder, sweet paprika, chili powder, salt and pepper to taste.
- Cheese: 2 cups shredded Mexican blend (or your favorite melting cheese).
- Optional: Guacamole and salsa for serving.
How to make baked chicken quesadillas
- Preheat: Heat oven to 425°F. Line two baking sheets with parchment paper and lightly spray with cooking spray.
- Mix filling: In a large bowl, stir together shredded chicken, baby spinach, sour cream, cumin, garlic powder, paprika, chili powder, salt and pepper. Taste and adjust seasoning.

- Assemble: Working one tortilla at a time, spoon filling onto half of the tortilla, sprinkle with cheese, then fold. Repeat with remaining tortillas and place on prepared baking sheets. Lightly spray the tops with olive oil.
- Bake: Bake for about 15 minutes or until the tortillas are golden brown and crispy. Remove from oven.
- Serve: Cut each quesadilla in half and serve warm with sour cream, guacamole and/or salsa.
Tips for the best quesadillas
- Oil helps crisp: A light spray of olive oil on top of the tortillas promotes a golden, crispy finish.
- Flipping optional: You can flip them halfway through baking for extra even browning, but it’s not necessary.
- Watch the time: Tortillas can brown quickly in a hot oven, so check them during the last few minutes.

Variation ideas
- Different meats: Use pulled pork, steak, or leftover roast instead of chicken.
- Cook your own chicken: Poach, pressure-cook or slow-cook chicken breasts, then shred if you don’t have rotisserie chicken.
- Tortilla swaps: Corn tortillas, low-carb tortillas or whole wheat are all fine alternatives.
- Veggie additions: Sauteed peppers, onions or mushrooms add extra flavor and texture.
- Flavor twists: Make Buffalo-style quesadillas by tossing the chicken with hot sauce and using blue cheese and cheddar instead of a Mexican blend.
Serving suggestions
The quesadillas already include protein, cheese and greens, so they’re a complete meal. Serve them with Mexican-style rice, a crisp southwestern salad, or simply with guacamole and salsa to keep things light.

How to store and reheat leftovers
- Store leftover quesadillas in an airtight container, separating each with parchment paper so they don’t stick.
- To reheat and keep them crispy, warm in a 375°F oven for about 10 minutes or reheat in a skillet over medium-low heat until heated through.
