Ingredients

For the Toasted Garlic Bread

  • 8 slices Italian bread1/2-inch thick
  • 1/4 cup olive oil
  • 1 clove garliccut in half

For the Salad

  • 2 cups fresh grape or cherry tomatoesdiced, or 3–4 Roma tomatoes, diced
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil ribbons(stack leaves, roll, and slice into ribbons)
  • 2 cloves garlicminced
  • Salt and freshly ground pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Balsamic glaze, optional for topping

Instructions

  • Preheat the oven to 400˚F.
  • Line a baking sheet with parchment paper or foil.
  • Brush each bread slice with olive oil and place oiled-side down on the baking sheet.
  • Toast in the oven 8–10 minutes until golden; watch so it doesn’t burn.
  • Remove and flip the slices; rub the cut side of a garlic clove over each warm slice and set aside.
