It mixes up in minutes and keeps in the refrigerator for up to two weeks, so you can pull off a few rolls, a loaf, or skillet bread whenever you need. Make a batch, store it in a lidded container, and use portions as you go.
The technique is simple and the results are reliably delicious. The original approach comes from Zoë François and Jeff Hertzberg, and it’s become a staple because it’s forgiving and practical.

Recipe Ingredients
- Water: about 3 cups lukewarm water (around 115°F).
- Instant or Active Yeast: 1 tablespoon.
- Salt: 1 tablespoon kosher salt.
- Flour: 6 ½ cups all-purpose flour.
How to Make No-Knead Dough
- Dissolve the yeast: In a large mixing bowl, combine the lukewarm water, yeast, and salt. Stir until the yeast is dissolved.
- Add the flour: Add the flour and stir with a wooden spoon until the dough comes together and all the flour is incorporated. Don’t overmix.
- Rise and store the dough: Cover the bowl loosely with a clean kitchen towel and let the dough rise at room temperature for about two hours. If you don’t plan to use it immediately, transfer the dough to a lidded container and refrigerate.
