There’s something truly magical about culinary serendipity, isn’t there? Like when you’ve been perfecting a recipe for weeks, and it just so happens to align with a celebrated day! Today, of all days, is NATIONAL PI DAY, and what better way to honor it than by sharing my latest obsession: this extraordinary Grain-Free Chocolate Chia Pudding Pie! I promise, this perfect timing is a pure and delightful coincidence.

I actually created this pie almost a month ago, but between capturing its beauty and fine-tuning the written word, it took a little longer to bring it to you. As many of you know, my kitchen has been a vibrant laboratory for exploring all sorts of grain-free alternatives. Just recently, I unveiled my absolute favorite grain-free granola – an absolute must-try that has, surprisingly, eclipsed traditional granola in my heart and on my breakfast table!

When I first embarked on this chocolate pie adventure, my goal was to craft a dessert that was not only delicious but also accommodating to various dietary needs. For the initial batch, I sweetened it with Swerve, aiming for a keto-friendly treat that our entire family could enjoy. The results were fantastic. However, on my second attempt, I opted for honey as the sweetener. And while both versions are undeniably wonderful, I must confess a slight preference for the depth and natural sweetness that honey imparts. Rest assured, whether you’re following a keto, paleo, or any other specific dietary regimen, you’ll achieve truly spectacular results with your preferred alternative sweetener in this recipe.

Who can resist the allure of a slice of pie? Even those adhering to a restricted diet deserve to indulge in a truly satisfying dessert once in a while. And this particular pie? It’s not only a dream come true for your taste buds but also incredibly “easy as pie” to make! (I simply couldn’t resist that one.)

Rich & Creamy Chocolate Chia Pudding Pie - Paleo Friendly

Grain-Free Chocolate Chia Pudding Pie - Guilt-Free Dessert

Before we dive into the full recipe, let’s explore a couple of key components that make this Grain-Free Chocolate Chia Pudding Pie truly stand out.

Unveiling the Perfect Grain-Free Pie Crust

The foundation of any great pie is its crust, and this one is nothing short of exceptional! This incredible crust is lovingly crafted with almond flour, making it completely paleo-friendly and, as the name suggests, gloriously grain-free. For this particular recipe, I’ve adopted and slightly adapted a fantastic recipe from Elana’s Pantry. It’s a true game-changer!

What makes this almond flour pie crust so remarkable? Firstly, it’s incredibly simple to prepare, coming together quickly with minimal fuss. It presses effortlessly into a 9-inch pie plate, creating a uniform base. Once baked, it boasts a delightful texture – sturdy enough to hold its shape after slicing, yet wonderfully tender and crumbly in every bite. And the flavor? It’s subtly nutty and perfectly complements the rich chocolate filling without overpowering it.

Even if you’re not strictly adhering to a grain-free diet, I wholeheartedly encourage you to give this almond flour crust a try. You might just find yourself preferring it over traditional crusts. Almond flour offers a wonderful alternative, being naturally gluten-free and lower in carbohydrates than wheat flour, while also providing a good source of healthy fats and protein. It adds a nuanced depth that elevates this healthy chocolate pie to a new level of sophistication.

What Exactly is a Chocolate Chia Pudding Pie?

Next up, let’s talk about the star of the show: the chia pudding filling! I’ve been experimenting quite a bit with chia pudding lately, and if you’ve tried it before, you might be familiar with its unique texture – often described as a bit “goopy” or jelly-like, which can be off-putting for some. However, if that texture has held you back from exploring chia puddings in the past, let me assure you, you have absolutely nothing to fear with this pie!

The secret to this pie’s luxurious texture lies in the careful combination of ingredients. By incorporating a small amount of cornstarch, along with the natural thickening power of chia seeds, we achieve a beautifully thick, incredibly creamy, and utterly smooth chocolate filling. There’s absolutely no goopiness here! In fact, the chia seeds become so integrated into the pudding that you’ll barely notice them, except for the delightful, subtle texture they add, almost like tiny pearls of chocolate goodness. So, at its heart, a chocolate chia pudding pie is essentially a rich, robust chocolate pudding, infused with the goodness of chia seeds, all nestled perfectly within a delicious pie crust.

Healthy Chocolate Pie with Chia Seeds - Delicious Dessert

You might still wonder, “Why use chia seeds at all if their texture is so hidden?” Beyond that fantastic, subtle texture they impart, chia seeds are true nutritional powerhouses. These tiny seeds are absolutely packed with protein, making this a more satiating dessert. They’re also an excellent source of dietary fiber, which aids digestion and contributes to a feeling of fullness. Furthermore, chia seeds are renowned for their healthy fats, particularly omega-3 fatty acids, which are vital for overall well-being.

But their benefits extend beyond nutrition. When mixed with milk, chia seeds have an incredible ability to plump up and absorb liquid, creating a natural thickening effect. This property is crucial in our pie filling, as it significantly reduces the need for excessive amounts of cornstarch, contributing to a lighter yet stable and wonderfully creamy consistency. They provide structural integrity to the pie, ensuring each slice holds its form beautifully, making this not just a delicious treat, but a truly healthy chocolate pie.

Customizing Your Grain-Free Chocolate Chia Pudding Pie

One of the best aspects of this chocolate chia pudding pie recipe is its remarkable versatility. You have the freedom to tweak and tailor it to perfectly suit your preferences or dietary requirements. As I mentioned earlier, you can easily swap the coconut milk for another dairy-free milk like almond milk, or even traditional dairy milk if that’s your preference. The choice of sweetener is also flexible; honey can be substituted with maple syrup, agave syrup, or your favorite sugar-free sweetener, allowing you to create a perfect keto chocolate pie or paleo chocolate pie version.

If the concept of a grain-free crust isn’t quite your style, or you simply have a beloved pie crust recipe you prefer, feel free to use it! This filling is so robust and flavorful that it will shine in any vessel. The goal here is to encourage experimentation and ensure that everyone can enjoy a slice of this delightful dessert, regardless of specific dietary needs or personal tastes. Whether you’re looking for a dairy-free chocolate pie or just a healthier alternative, this recipe adapts beautifully.

However you “slice” it (and yes, I’m using that pun again because it’s just too fitting!), this Grain-Free Chocolate Chia Pudding Pie is not just incredibly delicious, but it’s also wonderfully good for you. With very little added sugar and a wealth of nutrient-dense ingredients, it truly makes for the perfect sweet treat after dinner, a delightful snack, or even a healthier breakfast option. It’s a dessert that you can feel fantastic about enjoying, offering both indulgence and nourishment in every spoonful. Don’t hesitate – give it a go and let your taste buds rejoice!

Happy PI Day, everyone!

Description

Indulge in this irresistible Grain-Free Chocolate Chia Pudding Pie, a thick, creamy, and deeply satisfying chocolate filling made with nutrient-rich chia seeds and naturally sweetened with honey. This delightful filling is nestled in a tender, grain-free almond flour pie crust, creating a dessert that’s not only incredibly flavorful but also guilt-free and wholesome. Perfect for any occasion, this healthy chocolate pie is a must-try for those seeking a delicious gluten-free and paleo-friendly treat!

Ingredients

Scale

Almond Flour Pie Crust

  • 2 cups almond flour, finely ground for the best texture
  • ¼ teaspoon sea salt, to enhance the flavors
  • 2 tablespoons coconut oil, melted (or cold salted butter for a richer taste)
  • 1 large egg, to bind the crust perfectly

Pie Filling

  • 3 cups coconut milk* (light or full fat, full fat will yield a creamier filling)
  • 1/3 cup dark cocoa powder, for an intense chocolate flavor
  • 3 tbsp cornstarch, to achieve that perfect thick and creamy consistency
  • 1/4 tsp sea salt, to balance the sweetness
  • 1/3 cup honey** (adjust to your sweetness preference)
  • 1 tsp pure vanilla extract, for a warm aromatic note
  • 2 oz chopped dark chocolate (I recommend 90% cacao for a deep chocolate taste)
  • 1/2 cup chia seeds, which will thicken and enrich the pudding
  • 1 cup coconut whipped cream, or regular dairy whipped cream, for a light and airy topping

Instructions

  1. Begin by preheating your oven to 350°F (175°C) and lightly butter or grease a standard 9-inch pie plate. In a food processor, combine the almond flour and sea salt, pulsing briefly to ensure they are well mixed. Add the melted coconut oil (or cold butter, if using) and the egg, then continue to pulse lightly until a cohesive “ball” of dough forms. Carefully spread this dough out into the prepared pie plate using your hands, pressing firmly and evenly to cover the bottom and sides. For a beautiful, rustic edge, use a fork to prick the edges of the crust. Bake the pie crust for approximately 10 minutes, or until the edges appear lightly golden brown. Once baked, remove from the oven and allow the crust to cool completely while you prepare the decadent filling.
  2. Next, prepare the luscious chocolate chia pudding filling. In a medium saucepan, positioned over medium-high heat, vigorously whisk together the coconut milk, dark cocoa powder, cornstarch, and sea salt until all ingredients are thoroughly combined and no lumps remain. Bring this mixture to a gentle boil, then reduce the heat to a simmer. Continue to cook, stirring occasionally, for about 10 minutes, or until the mixture visibly thickens to a pudding-like consistency. Remove the saucepan from the heat, then stir in the honey (or your chosen sweetener), pure vanilla extract, and the chopped dark chocolate, whisking until the chocolate is fully melted and incorporated. Finally, add the chia seeds and stir them in thoroughly. Allow the filling to rest for 5 minutes, giving the chia seeds a head start on absorbing liquid, before carefully scraping it into the cooled pie crust. Use the back of a spoon to smooth out the top of the filling. Place the pie in the refrigerator for at least 4 hours to allow it to set completely (the longer it chills, the firmer and more enjoyable the pie will be).
  3. Once the pie has been fully chilled and set, generously spread your homemade coconut whipped cream (or regular dairy whipped cream) over the top. For an extra touch of elegance, you can garnish with chocolate shavings or a sprinkle of cocoa powder. Slice and serve this delightful grain-free chocolate chia pudding pie immediately, and prepare for rave reviews!

Make ahead: To save time, the almond flour pie crust can be prepared in advance. After baking and cooling, wrap it tightly in plastic wrap and freeze. When ready to use, simply let it thaw overnight in the fridge before preparing and adding the filling.

Leftovers of this delicious pie can be stored in an airtight container in the fridge for 3-4 days, remaining fresh and flavorful.

Notes

* For the coconut milk in the filling, you can easily substitute it with regular dairy milk or any of your favorite dairy-free milk alternatives, such as almond milk or cashew milk, depending on your dietary needs and preference.

** To adjust the sweetness or cater to specific diets, honey can be substituted with agave syrup, maple syrup, or your preferred artificial sweetener for a keto or low-sugar option.

The delicious almond flour pie crust recipe used in this recipe is thoughtfully adapted from Elana’s Pantry, a fantastic resource for paleo-friendly recipes.
