  • Rest: Remove the meatloaf from the oven and let it rest for about 15 minutes before slicing to preserve juices and make clean slices.

Tips for Success

Meatloaf is an unfussy, comforting dish. These tips will help you get the best results:

  • Don’t overmix: Gently combine ingredients—overworking the meat makes the loaf dense.
  • Fresh herbs: Swap dried herbs for fresh if available for brighter flavor.
  • Alternate sauce: If you prefer, substitute tomato sauce for ketchup in the glaze for a milder finish.
  • Even cooking: Let the ground beef sit at room temperature for about 20 minutes while you prepare other components; this helps it cook more evenly.
  • Gluten-free option: Replace regular breadcrumbs with gluten-free breadcrumbs to make the recipe gluten-free.

What Goes With Meatloaf?

This meatloaf pairs perfectly with classic creamy mashed potatoes and steamed or sautéed green beans for a balanced plate. Other great sides include baked potato wedges, scalloped potatoes, roasted sweet potatoes, or roasted Brussels sprouts. A simple salad also complements the richness of the meatloaf.

How to Store & Reheat Leftovers

  • Store cooled slices in an airtight container in the refrigerator for up to 3 days, or freeze for 2–3 months. Thaw frozen meatloaf in the refrigerator before reheating.
  • To reheat, place slices on a baking sheet and warm in a 350°F oven until heated through, about 10–15 minutes depending on thickness.
