- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg

- 1/4 cup almond milk*
- 3 tbsp avocado oil*
- 1 large, very ripe banana (about 1/2 cup mashed)
- 3 oz fresh spinach
- 1/4 cup agave syrup*
- 1 egg
Icing
- 3 tbsp heavy cream
- 1 cup powdered sugar
- 1/4 tsp vanilla extract

Instructions
- Preheat the oven to 350 F (175 C) and generously spray a donut pan with non-stick cooking spray to prevent sticking.
- In a large mixing bowl, whisk together both flours (all-purpose and whole wheat), baking soda, baking powder, cinnamon, nutmeg, and salt until thoroughly combined. Set aside.
- Place the almond milk, avocado oil, very ripe banana, and fresh spinach into a blender. Blend for approximately one minute, or until the spinach is completely pureed and the mixture is smooth and vibrant green. Add in the agave syrup and the egg, then blend for an additional 15 seconds to fully incorporate.
- Create a well in the center of your dry ingredients mixture. Pour the liquid green ingredients into the well, and gently stir until just combined. Be careful not to overmix the batter, as this can lead to tough donuts. A few small lumps are perfectly fine!
- To easily fill the donut pan, transfer the batter into a piping bag or a large Ziploc bag with one corner snipped off. Carefully pipe the batter into each cavity of the donut pan, filling them approximately two-thirds full.
- Bake for 10-12 minutes, or until the donuts are lightly golden (or rather, perfectly green!) and spring back when gently poked with a finger. Allow the donuts to cool in the pan for about 5 minutes before carefully removing them. Transfer the donuts to a wire rack to cool completely while you prepare the icing.
- To make the icing, combine the heavy cream, powdered sugar, and vanilla extract in a medium-sized bowl. Whisk until the mixture is smooth and creamy. If the icing is too thin, gradually add more powdered sugar. If it’s too thick, add a tiny bit more cream until you reach your desired consistency.
