Ingredients 

  • 2 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • salt and pepper to taste
  • 1/3 cup honey
  • 2/3 cup low sodium chicken broth
  • 2/3 cup low sodium soy sauce
  • 2 tbsp ketchup (I use no-salt ketchup)
  • 4 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 2 tbsp fresh parsley
  • 1 1/2 cups short grain white rice
  • 2 1/4 cups water
  • 1/4 cup cornstarch
  • 1/2 tbsp toasted sesame seeds for garnish

Instructions 

  • Heat the Instant Pot on Sauté. Add olive oil and heat until shimmering. Season chicken with salt and pepper and sear about 2 minutes per side until browned. Remove and set aside.
  • In a bowl, combine honey, chicken broth, soy sauce, ketchup, minced garlic, oregano, and parsley; mix until well combined.
  • Pour the honey mixture into the Instant Pot and scrape up browned bits with a wooden spoon. Add the seared chicken back into the pot.
  • Rinse the rice well and add it to an oven-safe dish that fits the Instant Pot trivet. Add 2 1/4 cups water, cover with foil, place on the trivet, and lower the trivet onto the chicken. Lock the lid and set the valve to sealing. Cook on Manual/High Pressure for 15 minutes.
  • When the timer finishes, allow a natural pressure release for 10 minutes. Open the lid, remove the rice dish with oven mitts, then remove the chicken to rest for 5 minutes.
  • Switch to Sauté. Whisk 1/4 cup cornstarch with 1/4 cup water until smooth and stir into the sauce. Cook until thickened, stirring often. Shred the chicken and return it to the sauce, then turn the Instant Pot off.
  • Serve the shredded honey garlic chicken over the cooked rice and garnish with toasted sesame seeds and sliced green onions if desired.
