Easy Instant Pot Beef Barbacoa

I love slow-cooked roasts like pork shoulder and chuck because they become meltingly tender and soak up any spice blend or marinade. The great news is you can get the same tender, flavorful result in a fraction of the time by using an Instant Pot. This beef barbacoa takes about an hour and a half from start to finish, compared with several hours in a slow cooker.

Instant Pot Beef Barbacoa delivers rich, Mexican-inspired flavors with minimal hands-on time. The Instant Pot creates a steamy environment that breaks down connective tissue and infuses the meat with spices, tomato paste, lime, and garlic so every bite shreds easily with a fork.

What is Barbacoa?

Barbacoa is a traditional Latin American preparation related in name and spirit to barbecue. Historically, it refers to slow-cooked meat—often goat, lamb, or beef—cooked low and slow, sometimes in an underground oven. The long, moist cooking process yields tender, juicy meat that’s ideal for shredding.

Modern home versions vary widely: some use the stovetop, slow cooker, or, as here, a pressure cooker. The essential components are steam and bold seasonings, which deliver tender, shred-ready meat packed with flavor.

For this Instant Pot version we use a chuck roast and a bright, aromatic spice mix that includes cumin, oregano, paprika, chili powder, lime, and a small amount of ground cloves for a subtle sweet-spicy note. Tomato paste and a bit of liquid create the braising steam the meat needs to fall apart.

How to Make Barbacoa in the Instant Pot

This recipe is straightforward and well-suited to the Instant Pot. Follow these steps for tender, shreddable beef:

  • Prep roast: Pat the roast dry and season generously with salt and pepper.
  • Sauté aromatics: Use the Instant Pot’s Sauté mode with olive oil to soften the diced onion and minced garlic for 3–4 minutes until fragrant, then cancel Sauté.
  • Layer and add liquids: Place the seasoned roast on top of the onion and garlic. Add tomato paste, water or broth, lime juice, bay leaves, and the remaining seasonings.
  • Pressure cook: Secure the lid, set the valve to sealing, and cook on HIGH pressure for 60 minutes.
  • Release and shred: Allow a 20-minute natural pressure release, then vent remaining pressure and remove the lid. Shred the meat with two forks, mixing it into the cooking liquid. If the braising liquid seems excessive, drain a bit before serving.

Tips for Success

Make the most of your barbacoa with these helpful tips:

  • Choose the right cut: Chuck roast is ideal for its marbling and flavor. Rump roast, tri-tip, or brisket also work.
  • Adjust heat: For more smokiness and heat, add a chipotle pepper in adobo, but add it sparingly if you want to keep the spice moderate.
  • Serving ideas: Use the shredded barbacoa in tacos with corn or flour tortillas, in burrito bowls with fresh corn and cilantro, or simply over rice with beans and salsa.

Serving Suggestions

Pairings that complement the beef:

  • Street-food style: Serve in tacos with diced onions, cilantro, lime wedges, and a favorite salsa.
  • Burrito bowl: Serve over rice with black beans, corn, pico de gallo, and avocado.
  • Sides: Chips and fresh salsa, grilled or Mexican-style corn, or stuffed mushrooms for a heartier meal.

How to Store and Reheat Leftovers

  • Store cooled leftovers in airtight containers in the refrigerator for 3–4 days. Reheat gently in a covered skillet over low heat until warmed through.

Can I Freeze Extras?

  • Yes. Freeze cooled barbacoa in freezer-safe bags or containers for up to five months. Thaw overnight in the fridge before reheating.
