  • 1 1/2 cups super-fine almond flour
  • 1/2 cup medium shredded coconut, unsweetened
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 3 tbsp honey*
  • 1/4 tsp salt

Chocolate Coconut Filling

  • 8 oz dark chocolate, chopped*
  • 1 1/2 cups full-fat coconut milk
  • 1 1/4 cup medium shredded coconut, unsweetened, divided
  • 1 tsp pure vanilla extract
  • mini eggs, for garnish

Instructions

  1. Preheat the oven to 350 F (175 C) and lightly grease a 9″ tart pan with a removable bottom. I used coconut oil, but you could use non-stick spray or butter as well. In a medium-sized bowl, whisk together the almond flour, shredded coconut, and cocoa powder until well combined. Add the melted coconut oil, honey, and salt, and stir with a large spoon until thoroughly combined and the mixture resembles wet sand. Empty the mixture into the bottom of the tart pan, pressing it firmly and evenly into the pan and about 1/2″ (1.25 cm) up the sides to form a neat crust. Bake the crust for 10 minutes, or until lightly golden and fragrant. Remove the tart from the oven and let it cool completely on a wire rack while you prepare the filling.
  2. Prepare the luxurious chocolate coconut filling. Place the chopped dark chocolate in a heat-proof bowl. In a medium saucepan over medium-high heat, warm the full-fat coconut milk until it begins to simmer, but do not bring it to a rolling boil. Pour the hot coconut milk over the chopped chocolate and allow it to sit undisturbed for 1-2 minutes to let the chocolate soften. Then, stir vigorously with a whisk or spatula until the chocolate is completely melted and smoothly combined with the milk, forming a thin, glossy ganache. If using, add any desired sweetener at this stage. Stir in 1/2 cup of the unsweetened shredded coconut and the pure vanilla extract. Pour this rich chocolate filling into the pre-baked and cooled crust. Gently tap the tart pan on the counter a few times to release any air bubbles and ensure an even surface. Place the tart in the refrigerator for at least 2 hours, or until the filling is completely firm and set.
  3. Decorate with Coloured Coconut. To create the beautiful rings of colored coconut as shown in the photos, prepare your coloured coconut. Empty 1/4 cup of coconut into one freezer bag and add 1 drop of orange food coloring. In a separate bag, place another 1/4 cup coconut with 1 drop of blue food coloring. For smaller accents, use a third bag with 2 tbsp coconut and 1 drop of pink food coloring, and a fourth bag with 2 tbsp coconut and 1 drop of green coloring. Shake each bag until the color is evenly distributed. Once the tart is firm, carefully arrange the colored coconut in concentric rings or any pattern you desire. Use plain white coconut for the center, and finish by topping with chocolate mini eggs or other festive candies for a charming Easter touch!
  4. Once fully set and decorated, remove the tart from the pan by pushing up the removable bottom. Carefully slice into wedges using a sharp, warm knife for clean cuts. Serve chilled for the best texture and flavor.

Leftovers of this delicious gluten-free chocolate tart can be stored in an airtight container in the refrigerator for 4-5 days. For longer storage, slices can be individually wrapped and frozen for up to 2 weeks; thaw in the refrigerator before serving.

  1. If making this dessert keto-friendly, substitute the honey for 3 tbsp of your preferred sugar-free liquid sweetener (e.g., sugar-free maple syrup or a few drops of liquid stevia).
