Demystifying the Galette: A Rustic Charm without the Fuss
Um, what is a galette?
If the thought of making a traditional pie from scratch sends shivers down your spine, fear not! A galette is your culinary savior. This free-form, rustic French tart offers all the buttery, flaky goodness of a pie crust without the daunting task of crimping edges or worrying about a perfect presentation. Think of it as pie’s laid-back, effortlessly chic cousin.
The beauty of a galette lies in its simplicity and inherent forgiveness. There’s no need for a pie dish or intricate lattice work. You simply roll out your dough, pile your chosen filling in the center, and then fold the edges of the dough loosely over the filling, creating a beautiful, organic border. This creates a stunning visual appeal that is both impressive and understated, perfect for any home baker looking to create a dessert that looks sophisticated but requires minimal effort.
Beyond its ease, galettes are incredibly versatile. While this recipe highlights the delightful combination of strawberries and Nutella, the same flaky crust can host a myriad of fillings – from sweet fruits like apples, peaches, or berries to savory combinations of cheese and seasonal vegetables. This adaptability makes the galette a year-round favorite, allowing you to experiment with different flavors depending on what’s in season or what you’re craving. If you’ve enjoyed our saskatoon cherry galette from last summer, you’ll find the crust for this strawberry Nutella version equally delightful, with a fun, romantic heart shape added for extra charm!
The Perfect Crust: Foundation of a Flaky Galette
The secret to a truly outstanding galette lies in its crust. A truly flaky, buttery crust provides the perfect contrast to the sweet, soft filling. Our recipe ensures you achieve this with minimal fuss. The key is to use cold butter and work quickly to prevent the butter from melting, which is crucial for those desirable pockets of flakiness. The dough is brought together with cold milk, contributing to a richer flavor and a more tender crumb. Chilling the dough for at least an hour is non-negotiable; it allows the gluten to relax and the butter to firm up, making it easier to roll and ensuring a perfectly tender crust.
You can even prepare the dough in advance, storing it in the fridge for up to three days or freezing it for up to two months. This makes galette baking incredibly convenient, allowing you to whip up a delicious dessert whenever the craving strikes, or unexpected guests arrive.
Strawberries and Nutella: A Match Made in Dessert Heaven
Few flavor combinations are as universally adored as strawberries and chocolate. When you introduce the creamy, hazelnut-infused magic of Nutella into the mix, you elevate this classic pairing to an entirely new level of deliciousness. The sweet-tart burst of fresh strawberries perfectly balances the rich, velvety sweetness of the chocolate-hazelnut spread, creating a harmonious symphony of flavors and textures in every bite.
For the filling of this galette, we keep it wonderfully simple. Fresh strawberries, diced to an appropriate size (halved if they’re large), are gently tossed with a touch of flour and maple syrup. The flour helps to absorb any excess moisture from the fruit, ensuring your galette isn’t soggy, while the maple syrup adds a subtle depth of sweetness. Then, the star of the show, Nutella, is generously swirled over the strawberries. This simple yet effective filling comes together in minutes, allowing you to focus on the joy of baking rather than complex preparations.
Store-Bought or Homemade: Your Nutella Choice
While we use convenient store-bought Nutella for this recipe, feel free to customize it to your preference. For those who enjoy a more homemade touch, our “notella” recipe offers a delicious chocolate-hazelnut spread alternative that you can whip up yourself. Alternatively, any other high-quality chocolate-hazelnut spread will work wonderfully. If you’re simply aiming for a delicious chocolate and strawberry pie without the hazelnut notes, melted dark or semi-sweet chocolate can be used instead of Nutella, providing a rich, unadulterated chocolate experience. The beauty of this recipe is its flexibility!

Baking to Golden Perfection: Tips for a Signature Crust
Once assembled, your galette only requires about 30 minutes in a hot oven to transform into a golden-brown masterpiece. Keep a close eye on it during the last few minutes of baking. You’re looking for that signature golden crust – a rich, even color that signifies optimal flakiness and a perfectly cooked dough. The filling will be bubbly and fragrant, and the strawberries will have softened beautifully within their chocolatey embrace. The aroma alone will be enough to tell you it’s almost ready!
A quick tip: If your crust is browning too quickly, you can loosely tent the edges with aluminum foil to prevent overbrowning while the center continues to cook through. This ensures an even bake and a beautifully golden finish.
Elevating Your Galette: Toppings and Serving Suggestions
While this strawberry Nutella galette is utterly divine on its own, adding a topping or two can elevate it to an even more luxurious dessert experience. The possibilities are endless, allowing you to customize it to your taste or the occasion.
- Chocolate Drizzle: A simple drizzle of melted dark chocolate or even extra warmed Nutella creates an elegant finish and reinforces the chocolate flavor. I sometimes use leftover chocolate ganache, like the kind from a decadent heart cake, for an extra touch of richness.
- Caramel Swirl: For a different layer of sweetness, a swirl of salted caramel sauce offers a sophisticated contrast.
- Whipped Cream: A dollop of freshly whipped cream adds a light, airy texture that complements the rich filling.
- Ice Cream Extravaganza: Serving your warm galette à la mode with a scoop of ice cream is truly a must. The cold, creamy ice cream melting into the warm fruit and chocolate is an unbeatable combination. My personal recommendation is a scoop of homemade roasted strawberry and rhubarb no-churn ice cream for an extra fruity and seasonal kick. A classic vanilla bean ice cream also works beautifully, allowing the galette’s flavors to shine.
- Fresh Garnishes: A sprinkle of powdered sugar, a few fresh mint leaves, or a couple of extra strawberry slices can add a professional and appealing touch to your presentation.
Serve this galette slightly warm to fully appreciate the gooey Nutella and tender strawberries. It’s the kind of dessert that invites everyone to gather around, grab a fork, and dig in!

Description
Decadence in the form of strawberry Nutella pie! This easy galette recipe is great as a Valentine’s day dessert or just for a date night in!
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 cup cold unsalted butter, cubed
- 1/3 cup cold milk* (any kind)
- 2 cups fresh strawberries (sliced in half if large)
- 1 tbsp all-purpose flour
- 1 tbsp maple syrup
- 1/4 cup Nutella or notella
- 1 egg, beaten
- Melted dark chocolate, or extra Nutella for drizzling (optional)
Instructions
- Prepare the dough by sifting together the flour, sugar, salt, and nutmeg in a large mixing bowl. Using a pastry blender or a fork, cut in the cubed butter until the mixture turns into coarse pea-sized crumbs. Slowly pour in the milk a little at a time, gently mixing with a spatula until a soft dough begins to form. Be careful not to overmix! Use your hands to form the dough into a ball, then flatten it into a disc and wrap it tightly in plastic wrap. Store the disc in the fridge for at least an hour, or up to 3 days*.
- Place the strawberries in a small bowl along with the flour and maple syrup, and stir to combine. Allow the mixture to sit covered in the fridge while the dough chills, or 1-2 hours.
- Preheat the oven to 425 F (220 C) and line a large baking sheet with parchment paper. On a floured surface, roll out the chilled dough into a 12″ (approx. 30 cm) circle (or heart shape). Transfer the dough to the prepared baking sheet.
- Place the strawberries in the center of the dough, ensuring you leave most of the liquid behind. You should have about a 2-3″ (5-7.5 cm) border of dough all around. Heat the Nutella in a microwave-safe bowl for about 30 seconds, or until it becomes more fluid. Pour the Nutella all over the strawberries in the center of the dough.
- Gently lift the edges of the dough up and over the filling in sections, pressing down lightly. Now is a good time to trim the dough a bit to create that heart shape if desired! When all of the dough is lifted up and overlapping, brush the edges with the beaten egg wash all over, and sprinkle with a bit of sugar. Place the galette in the oven and bake for 28-33 minutes, or until the crust is a light golden brown.
- Remove the galette from the oven, and drizzle it with melted chocolate or extra Nutella (optional). Top with ice cream, and serve immediately!
Leftover galette can be stored in the fridge for 3-4 days.
Notes
- Milk can be substituted for water; however, milk creates a richer, more tender crust.
- Prepared galette crust can be stored in the freezer, tightly wrapped, for up to 2 months. Thaw overnight in the fridge before using.
